I added a pound of cut up shrimp and used roasted peppers instead of pimento....excellent!!

I made this exactly as the recipe called for except I left out the ham, and it was very good. If possible, I would have given it 4 1/2 stars rather than 5, because it was a little dry, but I do like a moist macaroni salad. When I make it again I will increase the mayo from 2/3 cup to 1 full cup. I think then it will be a full 5-star recipe.

Wow, this is just the best...... so much flavor from so few ingredients. Like other reviews, I also found this 16 oz. macaroni required additional moisture so I added more mayo, sweet/hot mustard and some homemade picadilli. Try it, you'll love it!

I left out the pimentos, but still absolutely delicious.

Great recipe! I am not a big fan of traditional Macaroni salad but did enjoy this recipe and so did my family. I cut the recipe in half and it still made a lot - enough for leftovers today.

This is a winner, low cost, easy to prepare and big taste! The kids loved it and the adults couldn't get enough of it.

I don't normally care for macaroni salad, but was asked to make one for a church function. I chose this recipe and was really glad that I did! It's really tasty, especially once you let it sit for a few hours to allow the flavors to mingle.
I diced a few large 1/4 lb. slabs of boiled ham from the deli, as I didn't have ham steak. I also minced the shallots in a food processor so that people wouldn't get large chunks of onion in a bite. I doubled the recipe, as it said it would only feed 4-6 people. It made three 8-cup containers of macaroni salad! So, be aware that if you're going to take it to a get together, it will feed quite a few people more than it states.
It was very good. Many thanks to the Neelys!
