Really really enjoyed this recipe. Did not utilize the lemon mayo to cut calories, but I was left very satisfied none the less. Goat cheese would be great on this as well. Also, instead of using bread you could also use some type of wrap. However, I just love italian and french bread.

My girlfriends and I made this last night and each of us enjoyed it. I used my stove top iron griddle and it was easy and fun. We used small french bread since we had it on hand and it was great. Also, we had feta cheese that needed to be used so we subbed it for the fresh mozzarella cheese. This is a very filling dish. We were more than satisfied. We want to try different variations on this- adding shrimp, etc... YUMMY! Thanks Pat!

I love vegetable sandwiches but my husband does not. I served this to him and he JUST LOVED IT! I think the smokey grilled veges combined with the lemon mayo just hits the spot. Thanks Pat for this great recipe.

I knew I had to make this sandwich when I saw it featured. I have made this sandwich twice. It is hearty, well seasoned, and so filling it can last for another meal or two. It is also easy to prepare and kind on the budget. My husband loves it! Next time I am going to add grilled mushrooms next time for a smoky touch. This is great Pat!

I'm normally not the "veggie" type, but this sandwich was delicious. It wasn't hard to make either. The mayo recipe was simple but so addicting and full of flavor. The combo of veggies and the grilled taste were a perfect combo. I'm so glad summer is approaching because I'll be making this one over and over again. Pat, you ROCK!

I made this last night up here in snowy CT. Due to the fact that it is a little cold to grill , I roasted the vegetables in a 400 degree oven for 30 mins and toasted the bread in the same for about 15 minutes. It came out delicious.
