    This is a great start on a fish often overlooked for indirect grilling. A trick I have used to prevent the fish from sticking on the grill is to place the catfish on a piece of soaked cedar fencing (the cedar planks at the grocery are a joke, they are way too expensive and are the same thing as fencing material,. I baste the fish with freshly squeezed lemon or lime juice, butter and garlic and sprinkle it with paprika. Add some crawfish etouffe on top of the grilled catfish and you have a meal to die for.

    This was absolutely delicious. There was no "fishy" taste to the catfish and I was able to prepare the fish without having apple wood chips (I used a gas grill put on low, and put the fish in foil packets, it was ready in about 10 minutes. I'm sure the flavors weren't all there, but it was still a success!! I will definitely be making this again.

    This is a great recipe. In the winter when I can't get to the smoker I've baked it in the oven and loved it just the same.

    Awesome catfish recipe. I've loved on this recipe twice. Doctored the dill sauce with a bit of Texas Pete hot sauce the first time, along with some orange zest, and went straight hot sauce only the second time. The apple smoke flavor is the shizz.

    I know there was some boot knocking after that episode. Bruuush on. Bruuuush off. Gina is sweet molasses. ;

    My friend made this fish and it was great plus the sauce was a good compliment. If you like fish I would definlety say try this.

    Sounds great--I havent made it but will and may use trout also.

    Someone said not much Orange flavor in sauce--I would plan to add orange zest to taste till you get it where u want it.

    I had never had smoked catfish until I saw the episode. I bought a somker about a year ago and I never used it until I saw Pat smike the catfish. I have had it twice in two days. I so glad I watched that episode. I had to put my owntouch on the Orange Dill Sauce, but afterwards, it was to my taste. I love it and made a pint jar and filled it up with the sauce. Thanks so much for the recipes. i watch the show all the time. Love Ya'

    We'll definitely be making the catfish again but we'll give the sauce a pass next time. We couldn't taste the orange in sauce and It just didn't add anything. We found the fish much better with a little snipped fresh dill and a squeeze of lime juice.
