    I love this recipe!!! I've made it at least 10 times. Tonight I'm going to try it with Hawaiian Punch instead of pineapple juice. I love the Neely's!! They feel like family when you watch them.

    Still in the process of making it. I will know the result tomorrow. I couldn't find coconut cream and had to create it with a mixture of creamed coconut, coconut milk and caster sugar. I'm crossing my fingers. The mixture is very smooth and is chilling. Now to learn to use the ice cream maker!
    I just wanted to address the gentleman who talked about the milk splitting and seeing solids. I saw the same and decided to persist with the blender for a much longer time and on high speed. The solids melted away. 3rd time lucky?

    This is a real winner and so easy to prepare, but printing this recipe on my 3x5 card was very frustrating. There are 3 complete sentences that have been left out on the second card. I am finding this annoying feature in every card I try to print out. I have to fill in with a pen, which is time consuming and discourages me from even saving it. Doesn't anyone ever edit these recipe cards before they're posted on Food Network? Does anyone else notice this? A very disappointed Grannymandy

    This one's a keeper. Make's me think of the islands. To the man who made it for his girlfriend, it could be that the cream of coconut was out of date. Years ago, I had a can which had almost dried up.

    Maybe I did something wrong...twice! Last night I bought all the ingredients to make this for my girlfriend. I came home, blended it all together and the cream of coconut seperated into white chunks. I thought it was because I didn't mix the cream of coconut in the can. So, I went back to the store really fast to buy more stuff to try it again. This time, I whisked the cream of coconut so it was smooth and creamy and added it to the blender... IT STILL SEPARATED!!!

    I continued to go through with the recipe hoping that the giant chunks of white coconut cream would be tasty; it was gross. Perhaps someone can help me out on this, otherwise, this is not a good recipe...at least to me.

    This was an easy, yummy recipe. I omitted the rum, so the kiddos could have some. The recipe was still delicious. It was firm right out of the freezer, I just let it sit counter top for 5 minutes and it was soft enough to scoop. We will definitely make again.

    I halved this recipe for the sake of not wasting ingredients if I didn't like it, but I will make this one again, very easy and tasty. The sugar is built into the recipe with the addition of the cream of coco and pineapple chunks/juice. I noticed that a 15 oz. can of c. of coco is equal to ONE CUP of volume, not two. I am glad I poured it all out into a measuring cup b/4 halving it or I might have used the entire can for half a recipe...so be careful on that. I wish I could make this without the rum added so my 4-yr-old granddaughter could have this, but I think the rum is what keeps the sorbet from becoming hard as a rock. If anyone tries this recipe w/o the rum, I DO hope you'll give feedback on that. It scoops beautifully even a day later. I think this is a 'sherbet" by definition as sherbets have milk and sorbets don't. I think cream of coconut is considered 'milky' as well. This is good b/c it gives this treat more 'body.' A very lovely taste treat!
