I made this last night for my family 7 and it was horrible. I was so embarrassed. I hate to loose my money on a recipe that didn't work. I won't make a Neely's receipe again.

I'll admit, at first I was totally bummed that it called for an hour and a half slow simmer. I made some appetizers so that really helped keep my family from asking me "how much longer till we eat?" This dish is to die for, it's sooooo good. I've never had red beans and rice before and now I'm completely hooked. The only thing I didn't add was the bay leaf because I'm not a fan of it. I did everything else the same. Please give this dish a chance - you won't be sorry.

My 16 year old son who is a very picky eater said, "OMG! I haven't had a meal like this in a long time." It was and awesome meal.

This may not be the traditional way to make it but it is so tasty. The beans soak up all of the flavors in the 2 hour cooking time. I was really suprised by how flavorful it turned out to be. Will definately make again and again!

I've made this twice and will definitely make it again. The recipe is easy to follow and well worth the two hours simmering time. I told my sister about it while she was driving home from work. She made a stop at the grocery store to pick up the ingredients and made it when she got home. She is in agreement with me about the ease and flavor. I'm not sure what "real" red beans and rice should taste like, but until I find out this substitute is REAL good!

I wanted to make this for dinner before discovering it was a 2 hour recipe. I didn't have anything else planned for dinner so I made some modifications to make it quicker.

I used 1 1/2 cups of chicken stock instead of 3 cups and simmered on medium high for about 40 minutes.

It came out very good!! A few more modifications: I used Alton Browns baked brown rice recipe.....because brown rice is better for you, and I used chicken sausage.

I plan to try the 2 hour version to compare. Happy cooking!!
