Preheat the oven to 350 degrees F.

In a casserole dish, mix together the potatoes, oil, garlic, parsley, salt, and pepper. Roast for 20 minutes or until the potatoes are tender.

    These were good but needed 40 minutes in the oven not 20 minutes. Also, the sliced garlic turned into hard lumps.

    These potatoes are a very simple, tasty side dish. Instead of parsley, I used rosemary for some extra flavor. Next time, I will use a little more kosher salt. Definitely needs 35-40 minutes. All reviewers are correct in saying that 20 minutes is not enough. I also used baby red potatoes, as fingerlings were not available. I only gave this recipe 4 stars because it is a little boring. Fresh herbs and little more salt really kick the potatoes up a bit.

    Out of respect to the Neelys I gave this recipe a 5. To be honest I seen this recipe and did a few things different. I must say the party of 8 I had served are very educated eaters and i heard nothing but praise for what I served. My changes were par boiling the potatoes for 15 minutes. (dont you hate waiting for potatoes that never cook all the way Then I slowly sauteed the 8 garlic cloves until they were nice and brown. Then i used my pampered chef garlic press and pressed the garlic, evoo, parsley, and about 6 sprigs of fresh rosemary. I masaged all the ingredients together and whoala! A homerun....
