    Come on guys. Maybe it's your oven's fault, all ovens are not the same. Also, start checking your muffins/cakes with a toothpick at least 10 minutes before the 'done' time, they might be done before the full baking time and not be so dense and dry. Then too, beating the heck out of batter can also make baked goods dense and heavy. I like to try a recipe 2 or 3 times before i give it up on it.

    These were good, but I was a little underwhelmed with the spiciness. Does anyone know a good replacement for the fresno chili? I haven't heard of that and could not find it either. Also, using a 1/2 cup in the muffin tins was too much for the cooking time specified. More like a 1/3 cup, and had to cook them a few minutes longer.

    These were delicious and moist! But, next time I will just maybe not seed the jalapenos. I will make them again though! They were delicious otherwise...especially when dipped in Chili!!

    I loved this recipe!! The muffins were moist and flavorful. And sugar DOES NOT go in cornbread. Sweet cornbread is a dessert, not a bread served with the main course.

    Love the show - the Neelys play off each other well. The comments prove that everyone has their idea of what cornbread should be. I lived in Atlanta GA for 11 years - and I'll tell ya - NOTHING started a heated discusion than the subject about cornbread! Sugar - no sugar - pans or iron skillet - AND OMG! When it came to cornbread stuffing - baby hold onto your seat! Make it the same day - make it the night before or even x-number of days before! Passion abounded! And like clock work, you could count on these cornbread wars to start every year around Thanksgiving. Of course they were all correct! I'm not a native of Atlanta - so I just stayed out of the mix and watched and listened - which was great fun. Here's to you guys - may the best cornbread win!

    I made these muffins last night and thought they were good, moist, but not spicy. The color of the peppers made a good presentation. Also, there is no way 1/2 cup would make 12 muffins. I used less than 1/3 cup and barely had enough to fill 12 muffins cups. I had to bake the muffins for 15 minutes at 400 degrees. I will make them again, but add cayenne pepper to spice them up.

    These were moist, how could they not be with buttermilk, and BTW, sugar in cornbread is not bread it is cake.

    Spicy, awesome, cheesy, and just plain great!

    I have to start with "I love Pat and Gina!" I made these last night to go with some chili and they got a mixed review. I thought they lacked much spice or flavor - but they were ok if I spread some butter on them. My husband, however, enjoyed their flavor (and he tends to be picky. I followed the recipe exactly so I'm interested in those that try it if there are any modifications that may help bring out the flavor a bit more. I guess I could leave the ribs in the peppers to add more spice - but also wanted more of a sweet balance that wasn't there.

    Wow - what a contrast in recipes! I made the chili from this episode and loved it... The cornbread, however, was a total bust. I made the whole recipe and was spooning it into the muffin tins when it occured to me that there was no sugar in the recipe. It was far too late to do anything about it, so I let it ride. Honestly, I think cardboard would have tasted better. The peppers and onions did nothing for the recipe and the texture was like sand in your mouth. I tried to sweeten them up with some homemade honey-cinnamon butter, but the texture was too much to look past. I threw most of them away (I had a few guests that choked them down to be polite. I can't imagine that sugar was left out of the recipe on purpose... Unless some people like them that way.
