My wife and I watched the episode and drooled over the cornbread recipe! I went the next day bought all the ingredients that were'nt on hand hand and we had them with one of our chili recipes that night (by the way REAL chili has no beans. The muffins were bad, no flavor, dry and in general not good. We each had one and that was it, the rest went home with our daughter and she also didn't like them. In Texas we call it Mexican cornbread, and if you read this and want what we think is a good recipe, let me know and I might send you my Mom's. Otherwise we enjoy your show, keep up the humor.

Although these corn muffins looked good, they really needed something. Flavor was blah........perhaps some sugar would help.

These muffins were very tasty! A perfect accompaniment or bed for chili! So often corn bread recipies produce dry results. These were moist and savory.
I only had one small hot pepper so I drained a small can of green chilies to get to the suggested amount of diced pepper. Using muffin tin liners I found the recipe made 18 muffins of the 2.5 inch diameter size instead of 12. Even with the smaller amount of batter in each muffin I needed to bake the muffins for 15 minutes in a 400 degree F oven until a toothpick test came out nearly clean.
We had some with meat/rice stuffed green peppers and I discovered that the rest were perfect after being frozen. A nice down home taste. Thanks Gina and Pat! I love your show and love to see the love you have for each other!

They didn't have much flavor and I added extra chili's. They were very firm and a little dry.

Yummy!! None left for later. My taste is more for the sweeter cornbread and the sharp cheddar cheese makes the muffin salty with out the sweet kick I was looking for. Those who like a little sweet can add sugar (which I will do when I make these again otherwise they were a real crowd pleaser.
