    Delicious! Used a little less than half of the oil called for to lighten it up. Added 1 T. chopped chipotle in adobo sauce to the onion/pepper mixture. Added sliced mini chicken apple sausages to the sweet potatoes when frying. Topped this with poached eggs and hollandaise sauce flavored with orange rind and orange juice. Great for weekend brunch. Will definitely make again.

    Really good, easy and quick. I substituted green onions for chives and tastes great. Drained potatoes, didn't pat dry, and only used half of the olive oil and was just enough. Thanks for the idea :-

    Really yummy and really easy. I forgot the green onions and the parsley, but it was still really good. And I didn't even let the potatoes drain - I just ladled them out of the boiling water with a slotted spoon and transfered them to the saute pan. Worked fine!

    This was really great! A much more nutritious choice over hash brown potatoes. I followed the recipe exactly and it just a very well-balanced dish. I didn't have smoked paprika so I browned the paprika in a small saute pan until darker red/brown. I think raw paprika would've been too strong.

    Very tasty dish. I didn't need as much oil as it called for. Served with Chicken Apple Sausage and a sugar snap peas--good combination.

    I accidently left out the paprika, but it was still amazing. The recipe makes just 4 servings for us. Very tasty and our new favorite and healthy way to eat sweet potatoes.

    Very nice dish, substituted 1 idaho potato to give the dish a little more color and reduced the smoky paprika by half so as to not over power the hash.

    I love this recipe - it is my favorite side to make with salmon and comes out perfect every time! The only change I have made is to cube the sweet potatoes smaller. Bravo!!
