Ingredients

  • 1/2 gallon vanilla ice cream (store bought or homemade)
  • 1 cup toasted pecans, chopped fine
  • 1 1/2 cups caramel or chocolate sauce (store bought or homemade)

Directions

Serving suggestion: whipped cream and maraschino cherries

Make ice cream balls with an ice cream scoop. Roll the ice cream balls in the chopped nuts, then arrange them in glass dishes. Spoon caramel or chocolate sauce over the ice cream and serve topped with fresh whipped cream and a cherry if desired.

    This is a quick and easy dessert but I would recommend that after the ice cream balls are scooped, they are frozen for a few minutes to help them firm up a little before rolling in the nuts. Since you have to get the ice cream soft enough to scoop out, it tends to be a little too soft to hold its shape while rolling in the nuts. I would suggest making the balls ahead of time and then taking them out just prior to serving them and rolling them in the nuts. This will help approve their appearance. We topped the ice cream with hot fudge, butterscotch topping and whipped cream.
