Ingredients

  • 1 1/2 cups sugar
  • 1/4 teaspoon cream of tartar or 1 tablespoon white corn syrup
  • 1/8 teaspoon salt
  • 1/3 cup water
  • 2 egg whites
  • 1 1/2 teaspoons pure vanilla extract

Directions

Place sugar, cream of tartar or corn syrup, salt, water, and egg whites in the top of a double boiler. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.

    I used one tsp. organic fair trade vanilla from Frontier instead of 1.5 tsp. vanilla as the recipe calls for. Since organic... fair trade vanilla is quite strong, the flavor is amazine even with one tsp. I can't believe how awesome it turned out. Even better than Martha Stewart's recipe!Read more

    I melted some instant coffee in a bit of hot water then filled the rest of the way with cold water to make the 1/3 c. of... water. Mocha flavor in this heavenly frosting over chocolate cake with drops of chunky peanut butter baked in the cake - oh my! My husband said it was the best everything ever.     I made this for my son's 21st birthday cake. I didn't have a double boiler so I used a 6qt. pan, filled about 1/4 of it with... water, brought it to a boil, then put a pyrex 4.5 qt (large) glass bowl over the boiling water (don't let it touch the water). Using a hand held mixer, I beat it for the 7 minutes and it came out perfect! I used Karo's light corn syrup and it tasted delicious. Spread it on the cake (mine was chocolate) immediately after beating. I will make this again instead of buying store bought frosting, no comparison.Read more
