I made this for my son's 21st birthday cake. I didn't have a double boiler so I used a 6qt. pan, filled about 1/4 of it with water, brought it to a boil, then put a pyrex 4.5 qt (large glass bowl over the boiling water (don't let it touch the water. Using a hand held mixer, I beat it for the 7 minutes and it came out perfect! I used Karo's light corn syrup and it tasted delicious. Spread it on the cake (mine was chocolate immediately after beating. I will make this again instead of buying store bought frosting, no comparison.

I always loved my mom and mother-in-law's 7 minute frosting, but I was intimidated by the recipe that they had mastered. Now I can make this whenever I want and my family is thankful that I could recreate this old favorite a little more simply.

This frosting is heavenly. It is definately worth the time that you spend over the stove mixing the frosting with the mixer! It is creamy and fluffy. It tastes like marshmallow fluff.

Way too sweet, threw the first batch out and made a second batch with half the amount of sugar. I think I was looking for a marshmallow taste that I have tasted in 7 minute frosting. Althought this had great texture the taste was a little disappointing.
