This is one of the easiest and best tasting chicken salads I've ever eaten.

This recipe is so easy to make and tastes great on its own or in a croissant.

I enjoyed the tanginess the lemon juice gave, but found it to be more watery than I would prefer my chicken salad to be. I added more chicken which definitely helped. The almonds were a great addition!

I am very picky about my chicken salad and this recipe was perfect! The celery and almonds compliment the chicken with just the right amount of mayonnaise.

You can change it up by throwing in a half a cup or so of dried cranberries or by adding a bit of curry powder to the mayo. All in all a very good recipe-delicious and frankly, I am amazed that someone who "wasn't tempted" to even make the recipe could rate it. Don't you need to actually TRY something to rate it??

This fwas the easiest chicken salad I have ever made and the "lightest". I made a double recipe for friends and there were no left overs. Everybody wanted the recipe.

Wow! This recipe is easy, easy, easy and is every bit as delicious as Paula claimed in her show. I think that the lemon juice and salt make it extremely flavorful and not in the least bit bland.

I make this all the time, but make it with roasted chicken breasts (instead of boiled and fat free mayo. Fantastic light lunch!

For the folks who claim that there are equal parts mayo and chicken, please read the recipe more carefully. The recipe calls for 3 1/2 cups of chicken and 1/2 cup of mayo.

This is so good! I have never liked chicken salad until I tried this recipe. I love the crunch of the almonds and celery.
I poached my chicken. If you want to add some flavor to the chicken, I used the following recipe.

Excellent light meal for Summer. I added sliced seedless grapes and it was a great addition. Searved on Hogie rolls with Cheese Puffs - Family loved it.
