I have made Paula's Southern Cornbread Stuffing for Thanksgiving and Christmas for years and everyone always loves it. This past year I decided to try something new. It was a mistake. This stuffing is awful. The whole soggy mess was completely overpowered by bell pepper flavor. Before I added the eggs and baked it, however it tasted wonderful. As written, this recipe is a disaster.

I made this a few years ago for a Cranberry Themed Thanksgiving. My family is STILL raving about it and asks for it throughout the year!

    Still my favorite!

This was so amazing that I signed up to the website just to rave. First, I must confess that I had to substitute beef stock because of a poultry allergy. That was my only change, and it was delicious! My husband loved it, too, but he suggested adding about 1/4-1/2 cup bourbon and cooking it 10 minutes more. HEAVEN.

I wish I would have had time to make this stuffing along with my regular stuffing recipe for Thanksgiving last week. It tastes great! I took into consideration what others had reported; I used only 1 1/2 cups of broth, only 2 eggs and omitted the red pepper. I also used 10 cups--lightly packed--of the Hawaiian bread cubes and toasted them in the oven till brown. I baked it in a 9 x 13 glass baking dish for 35 minutes but it could have used another few minutes. Thanks, Paula! At last a recipe of yours that doesn't have mayo in it, LOL.

Excellent, well received. Took reviewer suggestions of adding sausage and letting Hawaiian bread cubes dry out overnight.

OMG..delish!!! I just served this for my Christmas dinner and it was a hit : The only change I made was to leave out the red peppers. Also I think two eggs would have been more than enough, but FANTASTIC! Love it, will use this recipe for years to come.

This was just ok. Wasn't worth the effort. Sorry Paula. I even read all the reviews and took peoples advice..only 2 eggs, not too much bell pepper etc.

I've made this for Thanksgiving every year since 2008. The first year I made exactly according to the recipe; years following I modified to cater to my family's taste.

I tear my bread in larger pieces the day before making. I also add one less egg and a tad less of the liquids than the recipe calls for, as we don't care for soggy stuffing.

My Mom has gotten bold enough to ask me to make double the recipe - one for dinner, the other for her freezer!
