This is an odd combo, but I liked all the individual elements enough to enjoy the whole. I went for the hot casserole version - sort of like a creamy Rice-a-Roni with some shrimp and olives. I followed the recipe out of Paula's "Living it Up, Southern Style", and in that version, it never says to add the actual artichoke hears into anything so I missed out on those. I think they would be a good addition as well though! I didn't find the curry flavor to be overwhelming at all. If anything, I'd season with salt and pepper less next time.

Yummy! I didn't put shrimp in it because I didn't want to spend a lot of money and it still turned out good.

My daughter made this for a luncheon and gave some to us. I liked it very much. I was only able to have one helping because my husband ate all the rest. He really likes it.

I have already made this recipe two times. My husband and I loooooove it!!! Both times I served it warm. Today I had some chicken in the freezer so I added poached chicken instead of shrimp. It was also amazing!

This salad is delicious! One time I did not have green peppers on hand and used red. A little sweeter and I liked it better! Curry dressing ratio is perfect. This salad is simple & wonderful with BBQ. Everyone loves it!

Too much curry powder easily overpowers the other ingredients. Read my full experience and see the photos on my blog:
