    I made this to take to dinner at a friends. Well it almost didn't make it. We enjoyed it so much. Next time I am going to add waterchestnuts and celery.

    My boys like leftover chicken and Rice-A-Roni. I have grown to dislike it. Now I can make a DELICIOUS alternative using half the Rice-A-Roni and Paula's Artichoke & Shrimp recipe. Excellent...and it is too fine to share so I am happy and they are happy!

    This recipe, minus the shrimp, was first printed in a Sunset cookbook in 1982. In that recipe, you follow package directions to make the rice a roni and do not add shrimp. That recipe is outstanding "Sunset Favorite Recipes II." I cannot even imagine it with shrimp in it. I think it would ruin it.

    I just made this for dinner tonight and thought this was a great recipe. I made it hot and didn't bake like the recipe suggested, I didn't think it needed it. Also, to make it a little lighter, I used light mayo and low-sodium rice-a-roni. This was VERY simple and tasty, I will make this one again!

    I'm sorry Paula, but I did not like this. Nearly all of the ingredients I love on their own. I was hoping this would make a nice salad to take for lunch at work, but it was not. The first time I tried this it had barely cooled to room temperature in the fridge, and it was okay. Given more time to chill in the fridge later that night, it had gotten gross. The texture was weird and the flavors did not go well together. Maybe it's better served hot? For good Paula recipes, check out her Chicken and Rice Casserole, Shrimp and Wild Rice Casserole, Broccoli Casserole, Pine Bark, and Lemon Blossoms. This, however, did not make the list.

    I made this for a gathering of friends and family. It was a big hit. I want to mention, it would also be great without the dressing. The curry stole the show. But, we chilled it overnight and served with the flavors merging together. It was wonderful. I had several guest ask for the recipe. I'm going to try chicken in it next time.

    This recipe is a refreshing dish that I prepared for my family while visiting in Nashville. It's a cool treat for the summer's hot and humid days. I served it with sliced tomatoes, cataloupe, and water wafers with pesto sauce. Everyone wanted the recipe. I plan to try the casserole version after the weather cools a bit.

    I was looking for something different to prepare for a Father's Day Dinner Cookout and this was it. I thought it was very good. I only used 1/2 teaspoon of curry as suggested by others and thought that was perfect. I served it cold and got requests for the recipe which means people enjoyed it. Thanks Paula.
