Aunt Peggy's Cheesecake with Praline Topping

Ingredients
  • Crust:
  • 1/2 cup (1 stick) butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 1 tablespoon sugar
  • Filling:
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • Praline Topping:
  • 2 tablespoons light brown sugar
  • 2 tablespoons cornstarch
  • 1 cup dark corn syrup
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
Directions

Preheat the oven to 350 degrees F.

Crust:

In a medium bowl combine the butter, crumbs, and sugar until well blended. Press into the bottom and 1-inch up the sides of a 9-inch springform pan, using the back of a large spoon.

Filling:

In a large bowl, using a hand mixer, beat the cream cheese, sugar, eggs, and vanilla until creamy. Pour into the prepared crust and bake for 35 to 45 minutes. Be sure the center is firm before removing the cheesecake from the oven. Remove the pan from the oven to a rack and allow it to cool completely. Release the springform and transfer the cake to a platter to serve.

Praline Topping:

In a small heavy saucepan, stir together the brown sugar and cornstarch. Stir in the corn syrup and cook over medium heat, stirring constantly, until thick. Remove the pan from the heat and stir in nuts and vanilla. Cool slightly.

Ladle the praline topping over the cooled cheesecake and serve. Store any leftovers in the refrigerator.

some complained about the praline topping. If you over cook this you will wind up with brittle. Apparently some people have never made brittle, otherwise they would know that this topping should not be over cooked. Maybe Paula should have told her viewers this as some are not experienced cooks. This cheesecake is delicious! If you're not planning on serving the entire cake at one time, just drizzle some of the praline topping over each slice, then store the topping at room temperature for the leftovers. This cheesecake was delicous...I suppose you have to cut into as soon as you ladle the praline topping on it. Don't let it sit!!!! It will harden in minutes and you won't be able to cut it! Again, still deliciou...just dificult to eat! item not reviewed by moderator and published
I made this cheesecake and it taste wonderful However after reading some of the reviews on this I realized I must have cooked the praline topping to long, because after it sit in the fridge all night I couldn't cut it. I told my husband he better get out the chain saw for this one....LOL! We finally did get it cut and it was delious....I will try this again and try not to over cook the praline. I must not have done something right because it was terrible. I had to cook it 10 mins longer than the max recommended and it was still soupy but the top was almost too dard... I loved this recipe! My mother loves pecans/pralines. I liked this a lot. The key to making the topping is to not over cook it. Really, once you add the corn syrup, since it's pretty thick, just heat it until you see bubbles around the edges, stir it, and take it off the heat. It will thicken more once it cools. I assisted my brother with this recipe last night. He has no previous baking experience, so I found this recipe to be very easy. The cheesecake's flavor was ok (not the best I've had). The praline topping was good. I was very surprised the topping didn't call for butter. I also see a lot of complaints that the topping was hard. We cooked the topping for about 3-5 minutes. It did not take anytime. Also, keep in mind that the sauce thickens as it cools. When we pulled it off the stove so fast, I was getting worried, because it was looking a little watery. As it cooled it thickened up to the perfect consistency. It also tasted better the next day after it sat overnight in the fridge. This cheesecake was super easy & delicious! By far one of the best I've had. I put mine in a water bath & it came out perfect. For the praline topping, I think you really have to be familiar with making things like this for it to work. I make pecan pralines all of the time, so this was easy for me. great recipe, followed it and it came out perfect. My sister made it first, but i did tweak some, lil more vanilla because i love vanilla. This recipe has been added to the collection. AWESOME. The cheesecake itself was really good. However, something went terrible wrong with the topping. I followed the directions but it hardened so much that we could not cut it. We pulled it off of the cheesecake and put it in a bowl hoping that we could heat it separately and drizzle over the cheesecake but to no avail. It hardened so much that is was unusable at all. I usually love Paula's recipes, but I was very disappointed with this one. The instructions for the praline topping is not very helpful. The cheesecake itself was delicious. I did mine in the water bath, which she should have added to the instructions. I did the praline topping but was unsure what exactly classifies as "thick" to her. I wish she would have put an approximate time frame or put what temperature it is supposed to reach. I cooked it until we thought it was "thick." It hardened very quickly, and the praline topping was so hard that we could not even cut the cake, much less eat it. We even beat it with the knife and it still would not crack. I had to turn the cheesecake upside down just so we could cut the cheesecake. I never usually have problems like this when baking, so I was obviously disappointed. I just utilized the filling and the crust recipe mainly. Blueberries are in season now, and I had them available, so that is what I used for my topping. It is really good. I will use this recipe again, but I don't feel the need for so many graham crackers. I used one package (of the 3 in the box of grahams) and only 3 tablespoons of melted butter and a small amount of sugar. I just lined the bottom of my springform pan and not the sides. The crust tends to be soft anyway, and I don't really care for the texture of too much crust on my cheesecake. And this recipe doesn't call for a water bath, but Paula did use one on the episode. She lined the pan with foil so the water wouldn't seep in and filled it 1/2 way up in a large roasting pan. This would definitily minimize cracking, although mine did have one with the water bath. I made this cheesecake and followed the directions "exactly". To me, it didn't have the traditional creme cheese taste that I've had from other cheesecakes. I also think that the Praline topping "overpowered" any taste that the cheesecake had. I recently watched an episode of Paula and she made this receipe with Chris Rock's Mom. OM goodness. So delicious and deceptively easy to make. I took another suggestion to toast the pecans for the crust so you should definitely do that. I would also suggest toasting a few extra to add to the praline topping- I added more like a cup since I love pecans. We couldn't wait for it to cool all the way, so we dug right in. AMAZING!! One tip: When you're making the sauce on the stove, an easy way to tell if it's ready to take off the heat: when the syrup coats the back of a spoon and barely drips off (similar to the consistency of caramel), it's ready!
