    this recipe was a big hit at a winter bbq. used my own tomatoes i grow indoors during the winter and made bite size chunks. sometimes i thin slice spring onions with dicing some of the tops as well.. MMMMMMMMMM GOOD STUFF

    Didn't have cherry or grape tomatoes, so I had to use Roma and slice them. Did not come out as well as I'd hoped with that substitution. The apple cider vinegar is a good fit - adds just a bit of sweetness. Next time I will stick to grape or cherry tomatoes that have more natural sweet tomato taste. Added a little feta cheese for some contrast, that was really good, but don't add too much or it will overwhelm the other flavors.

    One tip - don't make too much, only what you can eat. This recipe does not keep well, as the cucumbers will lose their water and when you go back to eat it, it's cucumber/onion/tomato soup.

    Refreshing! I used balsamic vinegar and had some leftover scallions and threw those in also. Thinking about adding roasted garlic to it also..when i served it i added feta cheese .

    Definitely would make this again..Perfect for the hot weather..I followed the recipe as is except I used shallots and 1/3 of red onion..I used 3 Tbsp of cider vinegar..I did try the red wine vinegar b4 but the cider is the best. Dont' forget the parsley that's very important. Sorry but used 1/4 c. of parsley instead of 2 Tbsp. Next time I'll have to try adding feta cheese..I know I said I followed as is but just doubled the ingredients.
