This was my first time making meatloaf and it came out really good. I was nervous since a lot of reviews said the meat didn't stick but mine actually stuck really well. I used one can of Rotel in the meat mixture vs. tomato paste. I opted to use paste and ketchup in the red sauce; of course with the Dijon mustard and brown sugar. It was sweet but balanced well with meatloaf and homemade mash potatoes. The only thing I didn't like was how much juice it created (which is normal when onion and bell pepper are added I just drained off access juice and popped it back in the oven. I also baked for maybe 20 more minutes. My husband normally cooks more than me and he really liked it. He recommended that I cooked it again in the near future :

I love this recipe. I have used this recipe since I was a little girl. Only difference is I usually use bread crumbs instead of oats but I make it both ways and I like it both ways. Oats was the traditional way to make it when I was a kid. I use 1/2 cup of ketchup instead of tomato paste. I also add a about a 1/4 cup of milk or less. I use 1/2 lb of ground sirloin and 1/2 pound of ground round. I eyeball the mixture and if it looks like it needs a little more bread crumbs then I add some. Then if I am feeling particularly lazy I use Heinz Premium Chili Sauce for the glaze over the top or just plain old ketchup.

I LOVE this meatloaf! I wouldn't change a thing about it. I don't mind if it falls apart, which it does, so I can blend the topping in to the entire slice. I like a tomato type meat loaf, and the paste does the trick for great flavor. Contrary to some of the reviews, I think the oats give a flavor boost, and would not switch to bread crumbs. I did use an orange bell pepper instead of green, because I like them better. The topping is rich and yummy!

Meatloaf fell apart. I think 8 oz of tomato paste is too much and perhaps more oats are needed. I think she must have used more meat. Very disappointed. Threw it away. What a waste! Perhaps they should test the recipes before publishing them.

Tastewise, it was ok, but it was not firm at all. The oats did nothing for it, would definitely use bread crumbs if I were to try it again. I did use a mixture of beef, pork and veal instead of just all beef. I think that helped give it more flavor. The topping was very good and think that helped also, but I think maybe it called for too much tomato paste to use in the loaf. Would probably just make my own meatloaf recipe next time, but make this topping for it.

I have made this recipe countless times for Mama, Nana, my 9 year old little brother and 14 year old big brother!! It has become my famouse dish in my family, although, I did find the glaze a little too sweet. Maybe cut back on the brown sugar. :

This meatloaf was so delicious! my family loved it, and we all agreed it was the best we have ever had! It was so juicy and just felt apart! perfect with mashed potatoes. Next time i will double the glaze because it was so yummy!

AWFUL. this sounded good but that is all.

I watch the show today, and the meatloaf like so good, i had ground beef so i decided to make the meatloaf, it was the most awful thing i have ever made, it never firm and it fall apart...bland ! I will definitely not make it again
