Ingredients

  • 1/4 cup sugar
  • 1 tablespoon, plus 1 teaspoon cornstarch
  • 2 tablespoons boiling water
  • 1/4 cup orange juice
  • 2 oranges, zest finely grated and juiced
  • 2 (1-pound, 1/2-inch thick) ham steaks

Directions

Preheat the oven to 350 degrees F.

In a small bowl, whisk together the sugar, cornstarch and boiling water until the granules dissolve. Whisk in the orange zest and juice.

Put the ham steaks in a large baking dish. Pour half of the glaze over the meat, turning once to coat them evenly. Bake for 1 hour, flipping the steaks occasionally and basting them with the remaining glaze. The glaze will thicken and the finished ham will be golden around the edges. Remove from the oven and transfer the steaks to a serving platter. Serve hot.

We loved it. I only used 1 orange worth of zest, and barbecued the ham steak on the grill. It's a keeper!

I thought the amount of orange zest was too much too, tho' actually the fact that I still haven't unpacked everything from the move 6 yrs ago & so can't find my juicer actually accounts for me adjusting the recipe more the anything. I bought medium pulp O.J. & increased the amount to almost 1/3 C & only added the zest of about 1/2 an orange. Then I added a pinch of dried orange peel. Also, I used flour instead of cornstarch since that's what I had. It was fabulous !!! The ham was tender & juicy & my hubby loved it. I cooked it the first 15 minutes under loose foil & the rest of the time uncovered. I served it with noodles & a tossed green salad. Definitely a keeper. I did keep an eye on it & make sure to keep it basted so it didn't dry out. Also, since I'd adjusted the recipe I was careful to keep an eye on it in general to see how it did. The glaze did thicken up but maybe not quite as much as it should since I increased the OJ amount. I'll definitely make it again.

I love most of Paula's recipes, but I didn't care for this one. Way too much orange zest.
