I made this with butternut squash - but other than that, followed the directions exactly. My crowd went wild and said it was amazing - however, I do agree with others that the sugar could be cut in half in both the filling and the topping. It was almost too sweet - if that's even possible - and I'm addicted to sugar! But the recipe is a 5 star for sure~

I made this for Thanksgiving and this was a hit! There was not a speck left in the dish. My family has been hounding me for the recipe since and I've been requested to make this for Christmas Day. In previous years I made a sweet potato casserole, people like it but always had left overs. I decided to switch up the recipe this year and that was a good choice. Very simple ingredients and easy recipe. I will be sticking to this recipe from here on out.

Delicious! Everyone loved this. Used Almond Flour to keep Gluten Free. Reminds me of the sweet potatoes served at Boston Market.

My apologies to Paula and Aunt Peggy, but the first time I made this it was insufficiently soufflé-like and far too sweet. On the second try I cut the sugar in half in both the soufflé and topping (also cut the self-rising flour in half. I used 6 egg whites, beaten to soft peaks and folded in, rather than just dumping in 4 beaten eggs. The result was a light tasty soufflé, not too sweet and much more appropriate as a side dish.

Fantastic dish! I'm not a big sweet potato fan, usually just eat a little of it at Thanksgiving... I decided to bring this dish along to our 2 family Thanksgiving dinners. It was very well received! After reading through some reviews, I added only 2/3 cup of sugar in the souffle mixture. I figured I'd start with that and add more if needed, but it tasted like just the right amount of sweetness. I did the same thing with the topping, only adding 3/4 cup of brown sugar. I have a big sweet tooth but I wanted this to be more of a side dish than a dessert so I didn't make it overly sweet. The 'souffle' itself was very light and tasty, and the topping was sooo good. Everyone loved it!

This was a big Hit! I never make sweet potatoes but this year I thought I would add it to the long list of sides. I will make this every year from now on, it is the only dish I have no leftovers of! To those of you who complain of it's sweetness, did you read the recipe before you made it? It does not pretend to be a savory.

Loved it! Could eat the whole thing by myself. The only thing I would change next time is cut back on the sugar on top, it made it a bit too sweet, but still so good. Everybody loved them including my husband who does not like sweet potato!
