Avocado Chicken Salad

  • Salad:
  • 3 cups cooked, diced chicken
  • 3 cups cooked white rice
  • 2 avocados, peeled, diced, and tossed with 1 tablespoon lemon juice
  • 3/4 cup chopped onion
  • 1 cup mayonnaise
  • 1 to 2 teaspoons pepper
  • 1 teaspoon salt
  • 1/4 cup chopped fresh parsley leaves
  • Avocado Dressing:
  • 1 large avocado, peeled and mashed with 2 tablespoons lemon juice
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon Worcestershire sauce
  • 1/3 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • Dash cayenne pepper
  • Thick, crusty bread, multi-grain or sourdough, for serving
  • Lemon wedges, for garnish

Mix all ingredients and chill. Pass with avocado dressing.


Place all ingredients in a food processor and blend until smooth. Chill and serve alongside chicken salad.

    I Absolutely love this dish just the way it is. Great dressing for all the time.
    I omitted the mayo in the salad part, added some broccoli, sweet red pepper, cucumber and green onion tops as I don't care for red onions. I also cut the rice and chicken in half [1 1/2 c.] and used the whole amount of the salad dressing. Great Salad for luncheons and bar*b*ques.
    This was pretty good! All the mayo, sour cream, and dressing was a little rich, but the flavor is delicious. I decreased the amount of onion by almost half but it was still a lot of onion. I'm an onion lover but it was a bit much even for me!
    First rule in a dish like this, hold back a lot of the salt and add later to taste. You can season this at the end.

    Found this to be a great summer salad along with white wine. I made a few changes that can be done based on your tastes. As some said, I did not add mayo to the diced chicken and avocado. Again, if you think it needs more add it at the end. I prefer more of the avocado flavor in the dressing. I did not have parsley, but added 1/4 C. cilantro and then more at the end since I love it with avocado. I thought it gave the salad a bright, fresh Peruvian/South American flavor. I also added more lemon juice at the end. Lastly, I left out all the onion because I don't care for the flavor of raw onion. I added a bit more garlic. Based on our tastes, we enjoyed the emphasis on avocado, lemon and cilantro.
    I used many of the great suggestions, THANKS! I cut back on the onion and DID NOT put mayo IN the salad, it seemed redundant since there's a dressing. But I added one chopped Mango! Wow it's awesome with the mango! I have a Chicken Veronique recipe I love, but grapes are so expensive these days that I'm using more of my other favorite fruits.
    Also, I'm keeping the salad and dressing in 2 separate containers and only mixing as I serve, refrigerating leftovers separately. I think it will keep better. I used sour cream in dressing too and its amazing!!
    I decreased the mayo a little, but other than that, wonderful. The dressing is good on regular salads too.
    Im not big on the chicken salad part of this recipe HOWEVER..... I am so in love with the dressing. I use it on my salads all the time. The best thing is its so easy to Modify... If you want less garlic or whatever.... Its a realy good Dressing.
    I read your reviews and gave me a better idea. Little salty on avocado dressing so add sour cream to reduce salty. Rice and Chicken with avocado with avocado dressing is really champion. We all enjoyed to eat and it was so delicious. It is really large amount and perfect for cookout or potluck party.

    It was so incredibly rich (too much mayonnaise), I got physically sick after a few bites. I had to dispose of the rest of it.
    A very yummy recipe and a great way to eat avocado. I do use way less mayo and added tomatoes (seeded and diced), but the basics of this recipe are great. I like to wrap mine up in a tortilla.
    At first I was very sceptical about this mixture of avocado/rice/chicken, but I made it anyway! I love avocados and this is the perfect summer lunch. I wrap it in tortillas. The sause is rich by itself but is wonderful when it is all put together! ENJOY!
    This was a BIG hit with us. I made a few adjustments but still a fabulous dish. For the salad: I used brown rice, 1/2 cup chopped onion, turkey cutlets, rubbed with grill seasoning and fried in extra-virgin olive oil, no avocados, but still added 1 Tab lemon juice. All else the same. For the dressing: used 2 avocados, 1/4 chopped onion, 1/2 cup mayo, 3 dashes cayenne pepper. All else the same. I can see me making this flavorful, simple recipe all summer long!
    It was very good little to oinoiny if thats a word that was not my opoin just that of my guest but it did have a lil byte of onoins
    I made quite the mess but boy was it worth it. I took it to a party and it was quite a hit!! People even asked me for the recipe. Thanks Paula for the great recipe :)
    This recipe was great after I made a few changes: only used a 1/2 cup of mayo in the salad, 1/4 cup onion, and instead of diced avocado, I mixed the dressing right in with the salad, which gave the avocado flavor and toned down the flavor of the dressing (which I preferred). I also changed the dressing by mashing 2 avocados instead of one, used only 3/4 cup of mayo, 1/4 cup of onion, and omitted the cayenne pepper altogether. Great twist on the classic chicken salad.

    I love Paula's recipes and have never had a bad one, until now. Too much onion...eliminate it from the actual salad and just put it in the sauce. Add a red pepper or tomato to the salad like another viewer mentioned. Don't add mayo to the actual salad, the sauce is enough. I wouldn't recommend this if you're looking for a "chicken salad" its more like an rice salad w/ advocado and onion.
    This was loved by all the Family-it's especially a hit with the Family when I make it with a Wrap Tortilla.
    I had alot of avaocados and left over rice so I tried this recipe. It was tasty and light because I cut down on the mayo (sorry Paula!) ;). I also grilled the chicken with some spicy steak seasoning which added a little kick to it. I served it with hot Italian breadsticks and my husband loved it!
    This is the best chicken salad recipe I've come across yet. It's mild but with lots of flavor. The rice adds a nice texture and the avacado makes it smooth and creamy. Great with some melon and date nut bread.
    First of all, I love avocado and any dish that can use it without trying to modify the flavor is great. The onions add a very nice taste and it is just great. Delicious. If you shred the chicken and mash the avocado, you can serve it with tostada chips at a party its really good!!!!

    This salad is delicious and fairly easy to prepare. Even my picky 2-year old wanted more!
    This is like chicken salad with a twist. It taste fresh and....different, but good. The dressing is also great on salads.
    I just made this salad for a late afternoon lunch. It was awesome. I wasn't sure about the rice but it gave it a nice texture. I used grilled boneless chicken tenders and to cut the fat just a bit I used half regular mayo and half light mayo in both the salad and the dressing. The avocado dressing is wonderful by itself. You could use it on other salads as well. I will make this again and again. Thanks Paula!
    I just had to write something after watching this segment of Emeril with Paula as his guest. Was it just me or did Paula seem a little neglected on this show - everything was Emeril, Emeril, Emeril! I know it was HIS show, but for some reason there was very little attention given to the dishes Paula was preparing - and, she didn't have the supplies she needed. I felt sorry for her, although true to form, she laughed a lot and made the best of it! Kudos to her!
