Bacon Cheeseburger Meatloaf

Ingredients
  • 1 pound ground chuck
  • 10 slices bacon, cooked and crumbled
  • 1 (8-ounce) package sharp Cheddar, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup bread crumbs, toasted
  • 1/4 cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup ketchup
  • 2 tablespoons prepared mustard
  • 1 (3-ounce) can French fried onions
Directions

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

AYAI HAVE MADE SO MANY DIFFERENTY TYPES OF MEATLOAF RECIPES FOR THE LAST TWENTY YEARS AND HAVE YET FOUND ONE THAT HAS GOTTEN RAVE REVIEWS UNTIL THIS ONE. I MADE THIS LAST MINUTE LAST NIGHT AND FOUND OUT FROM MY HUSBAND AND THREE BOYS THAT THIS IS THE KEEPER NO IFS ANDS OR BUTS.. THE ONLY CHANGE I WILL MAKE IN THE FUTURE IS THE ELIMINATION OF THE KETCHUP AND MUSTARD TOPPING. THEY ARE NOT BIG FANS OF THAT BUT EVERYTHING ELSE WILL STAY THE SAME. I USED MEXICAN MIX SHREDDED CHEESE BECAUSE I DIDNT HAVE JUST CHEDDAR AND I ALSO LAYERED THE MEAT WITH THE CHEESE MIXTURE SO THAT THERE WAS CHEESE IN THE MIDDLE BUT OTHER THAN THAT I STAYED TRUE TO THE RECIPE. My family calls this the "Ultimate comfort food." This is our favorite meatloaf recipe! I usually increase the amount of hamburg (1.5 lbs) and decrease the bacon (about 6 strips). I bake it on a cookie sheet with a oven-safe cooling rack and small piece of parchment paper under the loaf so the fat can drip off. The addition of ingredients generally bumps the cook time up approximately another 30 minutes, but it is so worth the extra time. item not reviewed by moderator and published

I love this! The only thing I change is that I use pimento cheese. It makes it heartier. But it's good with either cheese. Sometime I mix and use one in the loaf and one for the sauce. Love it Paula, and I love you! item not reviewed by moderator and published
We are healthy eaters, but do splurge once in a while and this is one of our favorite splurges! I rarely eat meatloaf, but this one is so delicious, tastes like a really good bacon cheeseburger without the bun. I do lay my prepared meatloaf on slices of white bread prior to baking so it does soak up the fat that renders from it while baking.
