Bacon Cheeseburger Meatloaf

Ingredients
  • 1 pound ground chuck
  • 10 slices bacon, cooked and crumbled
  • 1 (8-ounce) package sharp Cheddar, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup bread crumbs, toasted
  • 1/4 cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup ketchup
  • 2 tablespoons prepared mustard
  • 1 (3-ounce) can French fried onions
Directions

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

My family calls this the "Ultimate comfort food." This is our favorite meatloaf recipe! I usually increase the amount of hamburg (1.5 lbs) and decrease the bacon (about 6 strips). I bake it on a cookie sheet with a oven-safe cooling rack and small piece of parchment paper under the loaf so the fat can drip off. I love this recipe. I watched her make it on one of the shows and then made it that night for dinner. It is greasy but the best tip from the show, which I'm not sure why its not included, is to put slices of bread in the bottom of the pan to help soak up all the grease. I have made it with and without the bread at the bottom and it helps tremendously. Just be careful not to serve the grease soaked bread to someone. I thought this was pretty good, but I agree with others that there are some texture issues with this particular style of meatloaf. I think it's caused by addition of cheese. There were pockets of sogginess most likely from the grease. It might help to let your meatloaf sit out a good half hour after baking....if you can wait that long! I think flavor-wise, it's tasty. The only thing I did differently from the recipe is only used 1 egg instead of 2 and cooked the meatloaf on a cookie sheet so it browned better. This is the best meatloaf I've ever had - even better than moms! Only modification I made was skipping the prepared mustard - instead I mixed ketchup, Worcestershire sauce & brown sugar to make a glaze for the top. Though I did tweak the recipe a bit it came out amazing! I didn't have cheddar, Worcestershire, regular mustard or french fried onions so I used the following as substitutes: white america, A1 steak sauce, spicy brown mustard, and wasabi ranch wanton strips ( made by "fresh gourmet" i found these in the salad toppngs section at the grocery store. The spicy mustard and A1 gave this meatloaf a really nice bite. I cooked it according to directions (40 min, added wanton strips and baked another 15 this came out very moist. I loved it! I used lean beef and a special meatloaf pan that drains the fat from the meatloaf while baking. It's called the Perfect Meatloaf pan. I'd suggest wrapping the meatloaf in bacon, though. I couldn't taste any bacon from the bacon I crumbled up inside of it (which was 7 slices, but the bacon on the outside was perfect! I used a 4 cheese Mexican blend since I didn't have sharp cheddar. I also used a meatloaf mix instead of the salt, pepper and Worcestershire sauce. I'd like to make this recipe to the letter next time. I discovered that I really love french fried onions, even though I don't like onions done any other way. I thought the ones I put on the meatloaf for the last 15 minutes came out softened and less flavorful, so while reheating it, I added them after all baking was done and they tasted great! This is soooo good! My kids love it and I am making it for our "after" Valentine's dinner Celebration. I do use lower fat ingredients though because it is so rich! 94% ground beef, half the amount of center cut bacon, low fat sharp cheddar(Cabots 75% Less Fat Sharp Cheddar is amazing!!!, 1egg + 2 egg whites, olive oil mayo, no salt....It is still moist and amazing. This was very good. After reading the other reviews, I decided not to put everything in either. I put half a bag of cheese, 5 slices of bacon and half the can of onions and I thought it was fine. I think putting in the full amounts would have just been way over the top. It cooked faster than the time time on the recipe and would have been overdone if I had left it in as long as Paula said. I'm surprised there are so many positive reviews. LOL! I have made it twice now and I think I'm done. The first time...it was waaaaaaay too greasy/fatty and had absolutely no flavor. The second time I made it, I doubled the amt of meat but kept the cheese the same. I did add some diced onion. I used 5 pieces of bacon (my family is not a fan of bacon, so honestly I could just leave it out. I couldn't use the fried 'onions' on top. Just couldn't. They're so gross and processed - can't stand to use them. We found it very bland and boring (and I'm sure the french fried onions wouldn't have helped. My family loved this meatloaf! However, I did make some small changes to remove some of the fat. I used 1 whole egg and 2 egg whites, only 7 pieces of bacon, a little less cheese and less mayo. Everytime someone suggests meatloaf for family dinner, they always call me to make this one. Best tweak I did is use Smart Balance mayo and 93% lean. I love this meatloaf. It's perfectly tender the bread soaked up the extra grease. I made it with out the ketchup. I used a third pound pork, ground round, and veal. My hubby made this the other day w/some modifications based on what we had in the house (and that I'd never make it as written - too rich for me. We used ground turkey, 1/2 mozzarella, 1/2 cheddar (didn't have enough of either one to do just 1, bacon bits(not sure how much he used, but it wasn't 10 slices worth! and left off the fried onions. I think he chopped up some onion & mixed it in instead, as we don't keep the fried onions around. He drizzled ketchup on top before baking. It turned out good. I don't think he put the bread underneath, but it wasn't floating in grease at all; usually don't get too much grease from ground turkey, & there wasn't much mayo to make grease. This meatloaf sounded delicious when I seen Paula make it on her show. That was not the case when I actually made it. The fried onions on top were disgusting. The amount of grease that was in the entire loaf was unbelievable, I should have known not to go with the ground chuck, but thats what it called for, plus greasy bacon, oily cheese, and oily mayo? I always trust Paula Deen to come up with a great recipe. However her recipies can also be excessive. Half the bacon and chesse is PLENTY for 1# of ground beef! You couldn't even fit 10 slices of bacon into 1# of ground beef. I used 1/2 of both and it was quite "rich" still. Delicious! This is now my new favorite meatloaf recipe. Not only did I love it, but my picky husband loved it, and my 2 picky kids (ages 5 and 6 gobbled it up fast! It's so easy to make and so tasty. On Paula's show, she used a 13x9 baking dish and lined it with 3 pieces of bread to soak up all the fat from the meat. Just shaped the meat into a loaf and placed it on top of the bread. I thought this was an easy, yummy comfort food classic. But, I did read the reviews before I made it and decided not to include the bacon to cut back on salt and extra fat. I also used low sodium Worcestershire sauce and didn't add any extra salt to the meat mix. I also added about 1/3 cup of minced fresh onion to the meat mixture as well. I am glad I didn't put it in a loaf pan though because sooo much fat/grease/cheese runs off when you just shape it and put on a broiler pan. I give this a 3 star because I really thought it was too salty. I tried the recipe with no salt, then low sodium bacon, and it was still too salty for my taste. My husband and his friend are my guinea pigs, but they really liked it. I make it for them every so often and I cook myself something else. My husband and I loved this meatloaf. I crisped the bacon in the oven and it stayed crispy even in the meatloaf. I added a few tablespoons of grated onion. I also changed the topping a bit to 1/2 c. of ketchup, 2 tbsp. of mustard and 2 tbsp. of brown sugar. I found this recipe a while ago and have made it several times. This meatloaf is worth the prep time. I use ground sirloin and cut back a little on the mayo and bacon to lower the fat some. Microwave bacon reduces the prep time and still tastes great! Thanks Paula for another family favorite! item not reviewed by moderator and published
My wife loves this meatloaf. She likes to prep it the night before and leave it in the fridge until I pop it in the oven the next day and have it hot and ready when she gets home from work. she doesn't just use beef, either. She uses a "meatloaf mix" of several ground meats (beef, turkey, and lamb I think). The fried onions add great texture.
