Ingredients

  • 1 pound ground chuck
  • 10 slices bacon, cooked and crumbled
  • 1 (8-ounce) package sharp Cheddar, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup bread crumbs, toasted
  • 1/4 cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup ketchup
  • 2 tablespoons prepared mustard
  • 1 (3-ounce) can French fried onions

Directions

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

    Very Good--Keep in Mind that Some Bacons Taste Saltier than Others

    My adult family was really pleased with this meatloaf and said it's a keeper recipe. None of us were too crazy about the... french-fried onions on top, though. Even though they didn't, I found it to be very salty--most likely due to the bacon. In general with all foods, they typically add extra salt at the table, and I typically like the amount given for a recipe. So, when they didn't add extra salt, I KNEW that it was too salty for the normal person. Again, my bacon might have been saltier than some other brands, so keep that factor in mind when making this.Read more

    This is excellent and doesn't have to be terribly bad for you. I substituted the beef for ground turkey and used turkey... bacon. I also added fresh minced garlic, and chopped up fresh onion, which i browned in the leftover grease of the turkey bacon. Since this wasn't as greasy, I opted to just add a little more bread crumbs and leave the bread out completely. I also like well-spiced food so I added: cayenne pepper, parsley, and Spike (an all purpose seasoning). I tend to be my worst critic when it comes to my own cooking but I couldn't stop eating this one!Read more

    Hey, Hey, Paula! I used to consider meatloaf a bland vehicle for the ketchup based sauce I made with it and made it only when... I had a craving for meatloaf sandwiches.     I followed the directions and this meatloaf was beyond excellent. My husband grew up hating meatloaf because his mom put... more vegetables than meat in the loaf. This was the perfect antidote to a bad experience! The toping helped seal in the flavors and kept the loaf juicy yet not greasy and the bacon just gave it that extra "oomph" of flavor.
