My hubby made this the other day w/some modifications based on what we had in the house (and that I'd never make it as written - too rich for me. We used ground turkey, 1/2 mozzarella, 1/2 cheddar (didn't have enough of either one to do just 1, bacon bits(not sure how much he used, but it wasn't 10 slices worth! and left off the fried onions. I think he chopped up some onion & mixed it in instead, as we don't keep the fried onions around. He drizzled ketchup on top before baking.
It turned out good. I don't think he put the bread underneath, but it wasn't floating in grease at all; usually don't get too much grease from ground turkey, & there wasn't much mayo to make grease. There was only a small hunk left once our meal was over.

This meatloaf sounded delicious when I seen Paula make it on her show. That was not the case when I actually made it. The fried onions on top were disgusting. The amount of grease that was in the entire loaf was unbelievable, I should have known not to go with the ground chuck, but thats what it called for, plus greasy bacon, oily cheese, and oily mayo? My fiance and I ate once slice each and then I gave the rest of the grease-loaf to the stray cats in the neighborhood.
