This was super and simple to make. Served it many times and got rave reviews. Most people that tried it asked for the recipe.I have been gladly sharing it:

Made this for the first time a couple weeks ago and everyone really liked it with one exception, there was just WAY to much basil. Basil is a very strong flavored herb and it overwhelmed out pallets. I am making it again for us tonight, but will be halving the amount of basil that I use. I also don't use "large" tomatoes, I use roma or campari tomatoes instead.

I love talapia and fresh herbs, but I thought the herbs overpowered the wonderful taste of this light mild white fish. It was just okay in my book and I doubt that I will make this recipe again. Too many other great tilapia dishes out there which I have tried and loved.

I read the reviews and was surprised at the 5 star ratings based on the ingredients, but since everyone seemed to think it was so great, I tried it. Disappointing ....this baked version of fish pretty much turned out like I expected....not so good. And yes, I did follow the recipe.

I'm actually not a huge fan of Paula Dean, not one at all to be clear. But no need to disregard a good recipe b/c you don't agree w/ someone's cooking philosophy. This seemed healthy and simple. The modifications I made, were that I added fresh thyme, I think this fish is so mild it can take on a lot of flavors. I was using fresh farm raised tilapia, a single 8 oz. portion for myself. I may have added a little more oil than the recipe calls for. I also added some thinly sliced shallots as I think it would pair great. Lastly, I added the smallest dash of white wine at the bottom. I cooked it at 400 for 12 minutes. It came out absolutely PERFECT, seriously one of the finest dishes I've ever pulled off. The olive oil and wine infused with the garlic, shallot, thyme and basil made this incredible sauce and I dumped my creamy mashed potatoes right in the baking dish which I was practically licking clean. Good, pretty healthy and easy dish. Just wonderful!

I am not a fish person; however I have been on a healthy regiment for over a year and figured I needed to broaden my menu....ABSOLUTELY DELICIOUS...SO GOOD I COULD NOT BELIEVE I ACTUALLY MADE IT LOL! I did not have fresh oregano so I substituted it with dried Italian seasoning. I did not skimp on the fresh basil...and I do not recommend trying to skip that ingredient.....it was the star of the flavor. Try this for sure, friends!!!

My mother-in-law told me about the recipe and raved about how good it was so I decided to give it a try and boy am I glad I did! This is terrrrrrrific. I actually used all dry herbs, and to cut down on the calories, I used nonstick spray butter in place of the olive oil. It was STILL delish. I'm sure it would even be better the way it's written. 20 minutes at 400 degress is the perfect amount of time too!
