    This was by far my favorite Tilapia recipe ever! Easy, delicious, colorful and to top that off, my 7 year old boy said, "Thank you Paula Deen!" Yes and I thank you, too!

    I prefer a more substantial fish like cod but...of course it takes a bit more spice and WOW! Bake it at 25 minutes, increse the tomato to a heavier slice because the cod requires a bit more acidity, and add a bit more of all the spices and powders!! FANTABULOUS!!

    Only had cod on hand, but it turned out wonderfully! Otherwise made recipe as is and everyone enjoyed it! The tomato (sliced very thin and basil combination was a fresh caprese taste and even my husband who is not the biggest sliced tomato fan said to make this recipe again!

    Excellent. Quick and easy. I typically take a recipe and adjust it to my taste. My alterations included..

    1. Chop the tomatoe and scatter over the fish
    2. Touch of white wine in the pan and over the fish (do before adding the herbs and S&P
    3. Add a few chopped kalamata olives over the top. Not too many so it doesn't overpower the delicate fish and other flavors.

    Delish!! Easy to make for one person. I used fresh tilapia, and as much as I LOVE tomatoes, next time I will leave them off the top. The edges of the fish that were not covered by tomato had a wonderful crispiness that I would like more of,

    I still have yet to make this, but wanted to mention to Scooter, that I always buy fresh Talapia.
    Unthawing fish is a pain and never tastes as good, I don't think.

    I cooked this tonight according to the recipe. I first thawed out the fish in the microwave on paper towel on the bottom of the plate. The plate was floating in water when the fish thawed. I drained the fish and dried the water up with more paper towel. Then I cooked the fish according to the directions and the fish turned out like mush. AWFUL!! Not flaky at all. The baking dish had over half an inch of liquid in it after I cooked it for 27 minuted on 400 in a convection oven. The fish was just floating in liquid. What did I do wrong? I really do love your show and your recipes Paula just not this one anymore.
