Ingredients

  • 4 cups crushed graham crackers
  • 3 sticks butter, room temperature
  • 2 eggs
  • 16-ounce box powdered sugar
  • 20-ounce can crushed pineapple, drained
  • 2 to 3 bananas, sliced
  • 12-ounce container whipped topping

Directions

Preheat oven to 350 degrees F.

For crust, mix crushed graham crackers and 1 stick of butter. Line bottom and sides of a 13 by 9-inch pan with mixture. Bake crust for 5 to 8 minutes.

Beat the eggs, 2 sticks butter, and the powdered sugar until fluffy. Spread mixture on cooled crust. Add layer of crushed pineapple and layer of sliced bananas. Cover with whipped topping and sprinkle with nuts or graham crackers. Refrigerate for 1 hour.

    Taste and presentation was perfect. Just like my husband remembers as a kid. I have made graham cracker crusts in the past without difficulity, but this crust was too dry. I ended up adding more butter then the receipe called for. I also found that it was very difficult to spread the cream mixture on the cooled crust without the crust coming appart and sticking to the cream mix. Maybe I made a mistake with the crust....I melted the butter before adding it to the graham crackers. Either way it was a huge hit at Christmas with my family and I am making it again today for Christmas with my husbands family.

    This is a holiday regular at our house. My mother made it and we all loved it. She also added chopped pecans (just a few and a few pieces of chopped marachino cherries to garnish the whipped topping....
