Ingredients

  • 1 stick butter
  • 1/2 cup brown sugar
  • 4 bananas peeled, halved, and cut lengthwise
  • 1/4 cup dark rum
  • Ice cream, optional
  • Pound cake, optional

Directions

In a large skillet, melt butter. Using a wooden spoon, add brown sugar and stir together. Add the bananas and cook until caramelized on both sides, over medium-high heat. Move pan off heat, add the rum and return to the stove to catch a flame from the gas stove or a long lighter. Stand back when ignited and flambe the bananas. Be careful a flame will shoot up above the pan. Let flame die down and the alcohol cook out. Serve bananas over vanilla ice cream and/or a slice of pound cake.

    I made this recipe for my fiance who is, unfortunately, lactose intolerant. I replaced the butter with this weird... butter-esque spread that contains no dairy, and served his with soy ice cream. He loved it! (Mine, of course, contained all the dairy goodness I could handle, and I was just as happy!) Plus, lighting the rum was a good way to learn to flambe, I think- it burned the alcohol off quickly, and the flame didn't go crazy. And, well, I've always wanted to light my food on fire!     I had 4 bananas that were ready to expire and since it's just me and my husband I cut the recipe in half the first night. I... put it over angel food cake and topped it with a scoop of homemade vanilla ice cream. We loved it so much I made it again the next night. Then, as someone suggested, we took the extra syrup and spread it on our pancakes. Yum! This one is a keeper.Read more
