Ingredients

  • 3/4 teaspoon coarsely ground black pepper
  • 4 skinned chicken breast halves
  • 1/4 cup freshly chopped basil leaves, plus 2 tablespoons freshly minced basil leaves
  • 1/3 cup (5 tablespoons) butter, melted, plus 1/2 cup (1 stick) butter, at room temperature
  • 1 tablespoon grated Parmesan
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Fresh basil springs, optional

Directions

Prepare charcoal grill.

Press the coarsely ground pepper into the meaty side of the chicken breast halves. Stir the chopped basil into the melted butter. Brush the chicken lightly with this mixture. In a small bowl, combine the softened butter, minced basil, Parmesan, garlic powder, salt, and pepper. Beat at low speed with an electric mixer until smoothly blended. Transfer to a small serving bowl; set aside.

Grill the chicken over medium coals for 8 to 10 minutes on each side, basting frequently with the remaining melted butter mixture.

Serve the grilled chicken with the basil-butter mixture. Garnish with fresh basil springs, if desired.

    the chicken came out pretty tasteless. i think if i marinate the chicken first in a white wine and garlic marinade first,... it'll be better. for health reasons, we didn't use a ton of the sauce, just a dollop. this does give it more flavor, but still not enough for my husband or i. will make it again, but wasn't thrilled today.Read more

    I love cooking with butter, but this recipe doesnt even deserve a star. I couldnt even stomach the butter spread and had to... throw it out. I also hated how the chicken came out and had to alter the ENTIRE recipe just so I could eat it. So now my basil plant is bare and I feel sick after eating this dish. If you cook this one, BEWARE! Not as good as one might think.Read more

    IMHO, too much butter involved to even consider. Julia Child loved her butter and there's no question that the fats and... oils enhance the flavors of foods. Unfortunately, having a dietary-induced stroke definitely takes the fun out of dining. Kind of like having having a double-cheeseburger with a diet coke. Low fat chicken and butter is not the way to cook. Read more

    Wow, does Paula Dean love her butter!! I can feel my heart beating a little slower after that meal, but it was worth it. I... added a bit of fresh lime juice to the chicken prior to cooking it and added about 1/2 tsp of lime to the butter sauce afterward. It was perfect. The butter sauce is out of this world delicious!     I admit this recipe sounded a bit bland... didn't have high hopes. And it was WONDERFUL! Chicken was moist & flavorful,... even when cooked without skin on the grill. Butter was AMAZING- we used it on our potatoes and bread- would make a wonderful garlic bread for an Italian meal or would also be great on rice. I'm going to make this for a family party next week & will add it to the regular summer rotation at home. Easy and terrific.Read more
