Ingredients
- 3 cups leftover cooked white beans (these are best cooked with a ham hock for flavor)
- All-purpose flour, enough to bind patties
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- Mayonnaise
- 8 slices white bread
- 1 small onion, sliced into rings
Directions
In a medium bowl, coarsely mash beans with a fork and add flour until well combined. Shape bean mixture into 4 patties. Melt butter and oil together in a large skillet over medium heat. Add bean patties, in batches as necessary, and brown on both sides until crispy.
Spread mayonnaise on 2 pieces of white bread. Place bean patty on bread and top with onions. Repeat to make 4 sandwiches.

I've made this recipe many times and it never fails!! When I make beans I make enough to feed an army. So this recipe is great if you want something different than a bowl of beans every night.

I used some left over "red beans" for this sandwich. I felt the patties needed something else to help bond them besides the flour so I dipped them in some bread crumbs before frying them .They were great!

I tried this out once before I tried it on my husband to test if it was something he would like. I even used it with the same beans paula used on the show. (Her recipe for slowcooker beans with ham. Mine didn't turn out but I took one bite and threw it away. I doubt its a good recipe and I know it can be good I just think it should give a better idea of how much flour to put in, Im guessing thats where my mistake must have been. I will try and make this later in the week if we still have leftover from the beans.
