Ingredients

  • 1 medium cucumber
  • 1 small onion, quartered
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 teaspoon salt
  • Dash hot pepper sauce
  • 1 drop green food coloring
  • Thinly sliced white bread
  • Mayonnaise
  • Parsley or watercress, for garnish

Directions

Peel cucumber and slice in half lengthwise; remove seeds with a small spoon. Place cucumber in a food processor and pulse about 5 times, until cucumber is minced. Place cucumber into a small glass mixing bowl. Place onion in the food processor, pulsing until it is finely chopped. Add onion to cucumber. Add cream cheese and stir well with a spatula. Add salt, hot sauce, and food coloring. With a round cookie or biscuit cutter, cut rounds out of bread slices. Spread a small amount of mayonnaise on bread rounds. Spread cheese mixture on half the rounds and top with another round. Garnish with a sprig of parsley or watercress.

    I followed this recipe and found the results to be very bland. I added several dashes of the tobasco, some freshly ground... black pepper, 1/2 of a preserved lemon diced and about a tablespoon of chopped dill. It tasted better at that point, but it still was a little lack-luster. I made it the night before. When I made the sandwiches, I spread both slices of bread with this spread and then added sliced cucumber and watercress leaves and then put the two pieces of bread together (sandwiching the cucumber and watercress in the middle).Read more

    I made these for a brunch and they were a big hit. Be sure to drain the cucumber and onion (I wouldn't have known to do this... without reading the reviews). I had some of the mixture left over and it was a great dip with crackers as well. Read more

    I made these sandwiches for a Bridal Shower and everyone loved them. I let the cucumbers and onions drain(lots of water in... them) for an hour before I mixed them with the cream cheese. I also added a little fresh dill to the mixture. They were quite refreshing for a summer shower and quite pretty on a serving tray. I will make them again.Read more
