I tried this and found it to be a big hit with my 5 year old he is a picky eater, found the tip of draining the onions and cucumber did make a difference this is a good summer spring sandwich.

Very good but way too watery....obviously I will change that next time and I'm sure it will be excellent. I did not have time to read the reviews so I didn't realize there was an issue til I had already combined the cucumber and onion with the cream cheese.

Absolutely delicious! The cheese mixture was light and cool and had just a subtle enjoyable crunch. Easy to make and so a wonderful addition to quick sandwich options. I also plan to use this on my burgers as well. Mmmm...

In Kentucky, we often top our benedictine sandwiches with a little bacon.

I thought the recipe was a little over powered by the mount of onion. But still very tasty!

I haven't seen benedictine since I left my hometown in Louisville, KY - and usually only at Catholic and Episcopalian events even then! I love it. I add another cucumber and nix the mayo and tobasco - a dash of cayenne. yummy!! reminds me of Derby day :D

This recipe is excellent but there's some important information missing. I just saw Paula and her sons make it and they DRAINED THE ONIONS AND THE CUCUMBERS BEFORE MIXING THEM IN THE CREAM CHEESE. Why is this information missing from this recipe? If you don't drain the onions and the cucumbers you will have a big mess that will definitely not be suitable for a sandwich.

Amazing how easy they were to make and how fast they left the table. :
