The reviewer below is a little confused; but I was the same way at first as well. Big Bob Gibson's BBQ is NOT the same as Gibson's BBQ. Gibson's has two locations in Huntsville, while Big Bob Gibson's is in Decatur (20 min away and it's about 30 years older. Hence the perceived discrepancy in the recipe (horseradish and the comment about the strong vinegar taste. NOT the same recipe. Hope this helps.

People, people, people: If you haven't been to Gibson's and ordered their smoked chicken -- the item that comes with this sauce, then don't assume this sauce is supposed to be like a thick barbecue sauce.

It's a watery, vinegar tasting sauce that you dip their dry chicken meat into in order to make it easier to swallow. I swear that the only taste that comes through on their sauce is distilled, white vinegar. BUT, it's a taste that kind of grows on you. I'm pretty sure the horseradish is a flourish on this recipe that is not present in what they're serving in Huntsville, AL.

Excellent sauce that can be used for many types of food. I made it but ignored the 1/4 cup of water asked for by the recipe. After I mixed up everything else, then I added 1-2 tablespoons of water at a time, so as to get my desired consistency. A little thinner for Donair, keeping in mind this is a great donair sauce for those who don't like the sweet. A little thick for use as a vegetable dip. My guess is that you can add a lot of twists to this recipe ie, ignore the horseradish and add something else. Enjoy and thanks for the receipe.

I have loved BBG for years! I live in North Alabama and was introduced to the white sauce by a college friend who was from Decatur. It is awesome on everything but my husband and I love it on chicken (baked or grilled. It's also great to dip friend chicken in. Two that floored us when we tried it was grilled shrimp and brolied salmon using the sauce as a baster. IT'S AMAZING! Those that have not had luck in making it with the measurements here....you can acutally order the bottles on www.bigbobgibsonbbq.com. You can also order there other sauces. You will never find a better red sauce or mustard sauce! Some of the sauces can also be found in some Walmart Supercenters. It really is worth a shot!

As always, I made my own adjustments. I doubled the horseradish, left out the cayenne, used bacon salt, 1/4 t msg, and added the water a little at a time till I got a nice dipping consistency. In the fridge overnight it set up some. Dipped mini meatballs that were hot pork sausage, hamburger, Fresno red peppers, garlic, onion, and hickory bacon salt. With the requisite white bread and milk. Dynamite combo. My guess is works on chicken for sure and maybe pork. Its a party keeper as everyone wanted the recipe. Either wanted it or were being polite. Who cares?

I made the following changes: I omitted the water entirely because I knew it would be too runny. It was also too sweet so I only added 2 pinches of sugar. It was wonderful with breaded fantail shrimp! I also made one batch with Wasabi in place of the horseradish. It was likewise good but powerful.

I prepared this receipe immediately after watching the show. I did review the comments before preparing and caught the typos--and prepared the sauce with 1/4 cup water and 2T of apple cider vinegar. The sauce was like water.; it looks wonderfuly thick on the program. I am very willing to try it again, but wonder if perhaps the conversion to a smaller amount is not correct. 1/2 cup mayo and 1/4 cup water---I should have know them that it would be runny. Suggestions?
