This is total comfort food! The best chicken salad I've eaten since childhood. I normally pack my salad full of nuts and grapes and curry powder, but this is the chicken salad of my southern childhood and I love it! I made panini for lunch yesterday and had leftover salad by itself for lunch today. A total winner!

Come on Food Network. You can at least get the name of the recipe right. This is an update of Paula's Bag Lady sandwich recipe from back in the day. It is Bag Lady New Millenium Sandwich not big Lady.
And yes, it is delicious

I was a struggling cook till I happened to get diagnosed with the big "c" and had to be in bed, seemed like forever, and when I couldn't read, due to the chemo, I went to my last resort, TV, and finally found y'all. Imagine my family's surprise when I cooked them something, (this and it wasn't burned, rubbery, or just plain icky. I'll make this again, and again and again. yummy

I made this using a rotisserie chicken I purchased at the grocery store...it was so QUICK, EASY, and DELISH!!! Kids (& their friends loved it, had to make another batch!!! (If ur worried about the 2T of reserved liquid, don't...there is more than likely enough in the bottom of the rotisserie container to make this to a "T"!!! Kudos, again, to Paula!!!

I am a big chicken salad lover and this was by far the best I have ever had!! The lemon-pepper seasoning really added something special to the recipe! Thank you so much for sharing this recipe with us Paula...we love ya!!
