    Made this for New Years Day for good luck!! But is always satisfying to have a great salad after all the heavy eating during the holidays.
    I cooked 1 lb peas from scratch till al dente and used 2/3 cup grapeseed oil, 1/2 the sugar and balsamic, but added 2 tsp pink salt and was delish.

    I had this salad at Paula's restaurant at Harrah's Cherokee Casino. This is awesome. It has everything that I like so it will be a favorite for a long time!

    This salad was very good. I say "was" because none of it is left. I did add green olives for a salt counter to the sweet dressing. My sister and I decided to go vegan for the month of June and we ate this salad on a bed of brown and wild rice. It was awesome! This salad is a keeper for a BBQ's side dish, or when it is too hot to cook.

    This is a Great Great Salad, always a hit and the bowl cleaned out. Easy & Quick to make. Can't beat it. Thanks again to Paula for a wonderful southern delight!!

    I took this to a potluck and it was the rage! so simple yet noone thinks of adding black eyed peas! next time I might add a little corn too.hmmmmm

    We had been invited to a friends house for cocktails and snacks on New Years Day. I took this recipe so that everyone at the party could share in the "good luck" that is extended to those that partake in the tradition. Most of the men curled their noses at this, however, all came to me later and ask that I share the recipe with their wives. Paula did it again!

    Pork and kraut is our traditional meal for New Years Day. I've been in the south for the past 10 years and know that black eye peas and collard greens are the southern tradition. We headed north for the day and I took this salad, and a side of collard greens, to introduce this to my family. The salad was a hit! We will be making this along with our traditional meal in future years. Very, very good!!
