Black Pepper Shrimp

Ingredients
  • 3 pounds fresh shrimp, unpeeled
  • 8 tablespoons butter
  • 3 tablespoons chopped garlic
  • 4 tablespoons freshly ground pepper
Directions

Preheat oven to 450 degrees F.

Wash and drain shrimp, and place in a shallow baking pan. In a saucepan, melt the butter, add the garlic, and saute for 3 to 4 minutes. Pour the butter mixture over the shrimp and toss to coat. Pepper shrimp until shrimp are well covered. Bake until pink, approximately 5 minutes, turn, bake a few minutes longer, and pepper again. You must use a heavy hand with the pepper.

Serve shrimp with warm bread and salad.

I love this dish! I usually steam shrimp in Old Bay and beer but saw this recipe and had to try it. I'm glad I did because I would have never thought of baking shrimp. It is delish! As an added bonus you can peel the shrimp and scrape up some of the sauce and put over pasta. My husband was working way into the night and I didn't think he'd want to peel and eat shrimp so I cooked some Parmesan and Angel Hair Pasta (pre-packaged) then added the shrimp and sauce afterward. We love this simple method of cooking shrimp. We saw it on Paula's show and put it to use that night. Even though it looks like WAY too much black pepper, it isn't! The amount of black pepper added at first is intimidating. You feel that it's much too much. I made this recipe for a BBQ this past weekend and everyone raved. I substituted regular ground pepper for fresh to speed things along and kept pepper at 4 Tablespoons. I had a choice of getting 8-10 count shrimp at around $10/LB or 30 count for about $6/LB both great prices here in South Florida. Because of the guest count about 15, I chose the smaller so everyone could get their fair share. This worked out well and I would still stick with this count or preferably a 26-30 count as they would be easier to peel.
