    Great fish blackening recipe! I made fish-tacos with this. Added a little horseradish to the cilantro mayo to give it more flavor. Topped the taco with a broccoli slaw from one of Big Daddy's recipes. Great! Of note: I skipped the stick of melted butter and just lightly coated the tilapia with some olive oil before applying the blackening rub.

    Now that's how to blacken fish or anything else for that matter! You could throw some Cholula or other hot sauce into the cilantro and lime mayo to give it a little kick. You could also make fish tacos out of these too. Watch out Paula, this was almost healthy! If she were my mom I'd weigh 400 pounds!

    this was delicious! i loved the seasoning and mango salsa. i made the mayo sauce a few hours ahead of time and let it sit in the fridge, though i had to doctor it up a little because i found the flavor to be missing something. i added just a little parsley, chives, red onion, extra lime juice, a hint of lemon juice, black pepper, and just a bit of minced serrano pepper. it was amazing!! i have extra mayo and cant wait to use it again on another recipe this week.

    I didn't do the salsa, but my Mom and husband loved the sandwiches with the cilantro lime mayo. Yummy!
