    I wasn't able to find kaiser buns in my grocery store so I just picked up a loaf of french bread and sliced it myself. I served the blackened fish with the cilantro lime mayo, but without the salsa and it was absolutely wonderful! My boyfriend kept going back for more servings... I think he had like 4 sandwiches that night. I will definitely add this recipe to my collection and make again and again in the future. I highly recommend this is you're trying to make something like this at home, very easy.

    I used less Thyme as someone suggested, but i used the dried thyme and chopped it a bit. I also added black pepper, white pepper, cayenne pepper and crushed pepper flakes. I also washed frozen fish with white vinegar, to get rid of some of the freshness. I like a lot of seasonings in my food, since I'm from the Caribbean. I let it marinate for about five (5 hours. I used white Salmon because its hard to find most types of fish at my grocery. I made fresh mango salsa since it is in season at this time in Trinidad. But instead of the Cilantro I used shadon bennie, as I read it's supposed to be similar.
    So all in all I pleased my boyfriend, who was reluctant at first to be eating fresh fish for a second time in the day. However, as he stated it was not fresh and the mango goes really well with fish.
    But I'm not sure I'd eat it without the salsa, might add some more spices next time.

    I couldn't find the sweet paprika so I used smoky paprika. Still delicious. My family just loved it, including my 11 & 14 yr old boys (which are hard to please. Definately a keeper.

    I didn't find it as easy to make as everyone else, and the butter made it kinda messy. But overall a great meal. Tastes great on onion buns! Husband liked it, too. Making it again tonight. Dana from St. Petersburg, FL

    I think blackened fish should be more spicy but that's just me. My husband eats blackened fish in Louisiana all the time and he says this is how it tastes there.

    We did not make this with the mayo or the salsa. We were just looking for a simple blackened fish and maybe the mayo and salsa would have "masked" the heavy thyme taste. It was overbearing. I would cut the thyme in half next time.

    I agree that you can buy some excellent bottled cajun seasoning and I would just use that next time. I added Tony Chachere's creole seasoning to kick mine up.

    This was simple enough to do, but was just ok to me. Maybe my spices have lost their flavor because this was not that spicy to me. Will adjust next time.

    I watched paula make this over the weekend and had to try it. The fish was nice & spicy. The cilantro mayo was good . I did grill my fish instead of pan fry it. It tasted great. I have a great & easy recipe for mango salsa so I made that instead of using a store bought salsa. The whole thing was really good & quick to make. This is a definite keeper. Way to go Paula !!!!     Had to substitute some things.. no onion poweder or garlic powder, and used white pepper to give it a bit of a milder flavor, I think I will try the what the recipe calls for next time. I just had to make it right away after I saw Paula make it on TV! (Also made dill mayo instead of the cilarntro.. and that was good tooo.. but probalby not as good....

    This was a very tasty dish. I used dried thyme leaves instead of the ground thyme to give the fish some more texture and visual appeal. I also omitted the onion powder and ground red pepper. I used a George Foreman grill to grill the fish and it turned out great. The mayo is delicious and so easy to make!
