Absolutley wonderful! I made these at the last family gathering and they were a hit! They were expecting the standard deviled eggs, but when they bit into it.. taste buds quickened and came alive!

I made these the night before for a group heading to a wine tasting to have a morning snack and they were a HUGE hit. Will make many more times! I used chopped chives instead of parsley for my green part and sprinkled a little on top along with a little bacon for presentation. I also used light mayo and no one could tell the difference!

I made these for a wine and cheese party last night. I doubled the recipe and they eggs were gone half way through the evening. People loved them, they were so delicious.

We made two dozen of these for a New Year's Day brunch and used Rachael Ray's Sittin' Pretty Egg Trays for transport and presentation. In our household we frequently tweak recipes, depending on what's in the pantry.
Using Paula's wonderful BLT Deviled Egg Recipe as a basis, we used chopped sun dried tomatoes (packed in olive oil rather than cherry tomatoes and substituted chopped fresh parsley for dried parsley. Both substitutions were made because that's what we had on hand. And, we added a couple shakes of Frank's Hot Sauce (like Tabasco, but not as hot.
The eggs were the hit of the party - once one or two had been tasted, word was passed around and soon there were none. Many folks declared them to be the best deviled eggs they had ever eaten. It should be noted that the buffet at the party was loaded with wonderful food and one wouldn't expect deviled eggs to be a star.

They went fast at my Aunts July 4th Party!! Tasted Great
