Loved it! Had an extra tomato and still enough stuffing. Might cut a little butter next time. Definitely a repeat recipe! Loved earlier reviewer idea of serving with Mac and cheese!

Also great for brunch with a quiche or other breakfast casserole. Sometimes I serve this as a side dish with macaroni and cheese for lunch or dinner. TERRIFIC!

I wasn't sure about just broiling. I cut the tomatoes and then used the Rachel Ray squeeze. Left nice little pockets for the filling. I used half a sleeve of crackers, 2 T of butter, 3 slices of cooked bacon and equal amount of blue cheese for 2 medium tomatoes. I lightly salted, peppered and red pepper flaked the tomatoes. Melted the butter added rest of ingredients (less the green onions, mixed, stuffed and sprinkled w/ hot pepper sauce, baked at 425 until the tomatoes just started to collapse. I think this mellowed the blue cheese. I still had chicken to bake so when everything was ready I put the tomatoes back under the broiler for a few minutes. Melt in your mouth and I'm pretty sure they would serve these in heaven. Obviously I like spice so maybe it's not Heaven.... :0

This was Absolutely Delicous!!! It is so so easy & quick, which is a must for me because I am chronically ill and have to make things that don't take forever to fix. I've already made it several times. Give it a try!

I think this would be better using Panko crumbs instead of Ritz and maybe mozzarella cheese with some feta thrown in would make this better. Also slice the tomatoes instead of cutting them in half.
