I love Paula's recipes, always have! I was SO excited to make this cake for my family, it looked so GREAT! But sadly it was disappointing. The cake itself was GREAT, fluffy and perfect. However, coming from a girl who loves super sweets to no end......the icing was a little to sweet. I also had the same problem with it getting hard quickly, but if you dip your knife in a little warm water and then spread it fixes that problem. So my cake ended up looking great. My biggest problem was this filling. It was SO griddy. I followed the recipe exactly, but the grit was terrible. Maybe I'll try it again and cook the filling for much longer than suggested.

    Hi Paula,

I've always wanted to make a caramel cake every since an old boyfriends mother made one and finally this was a slam dunk. She told me that it was a family recipe. That was in the late 90's. No boyfriend, no cake, but finally in my search and make I came across this wonderful recipe that is a show stopper and the people at my church love it.

Despite reading all the reviews, both good and bad, I decided to make this cake anyway. I had absolutely NO problems. My cake was moist, it didn't crumble, it wasn't too dense, and it easily came out of the pans. I think I had such good results because I took the time to read the reviews. The cake is a little heavier than an angel food, but I think you need a heavier cake to complement the heavy caramel icing.

When baking this cake, there are a few steps you need to really pay attention to. You really need to cream the butter and sugar in the first step. This creates air bubbles in the batter which prevents the cake from being to dense. You also need to allow the cakes to cool in their pans before going on to the next step. I would also recommend tasting the caramel icing as you're making it. Using an entire box of confectioner sugar is a bit much. I ended up using only about a cup or two. If it weren't for the amount of time it took to make the cake, I would have given it five stars.

Food Network recipes have always been my go to for all of my recipes and they always end up being delicious! So imagine my astonishment when i found this recipe that sounded amazing and decided to make it for my mom's birthday and when i pulled it out of the oven found the cake layers to be flat and rubbery. The cake hadn't risen at all, it was extremely dense (almost like a pound cake and rubbery in texture. It still tasted good but I decided to try making it again to see maybe if my modifications had screwed it up. (I used 1/2 a cup of butter and 1/2 a cup of applesauce, there is ALOT of butter in this recipe! yikes! So I tried it again and followed the instructions perfectly (even putting in BOTH sticks of butter and i ended with the same results. This recipe drastically needs to be rewritten. I'm so sad, how could Food Network have let me down like this?

I have made so many of Paula's recipes and rarely am disappointed in any of them. But with this cake I truly was. I made it for my mother's "86th" birthday and it turned out dry and with icing that was too too sweet. No one ate any of their icing on the cake. The cakes came out of the oven beautifully. Golden brown and yummy looking. But when I cut into it the cake was dry. I was so disappointed. The icing to me didn't even taste like caramel. I won't be making it again. Oh well, on to the next recipe.

Sure wish I had read the reviews for this cake before baking it for a family birthday party. Nobody liked it, including the little kids who love all sweets. The cake itself was dry, the filling gritty, and the frosting way too sweet and hard to handle. I bake many cakes from recipes in the gourmet magazines and the Cake Bible and everyone always looks forward to them. This was so disappointing - a waste of good ingredients and my time.
