    I saw this today on Paula's Best Dishes and just had to try it. I don't eat pork I subsituted with a spicy mango with jalepeno chicken sausage. I also added tarragon vinegar to the sauce. Very good!! I will be making this again and trying it with multiple varieties of chicken and turkey sausage.

    Good base for a potat salad. Sauted the celery with the sauage and added a little red onion. Garnished with the green onion. Also, added a couple hard boiled eggs. Afterall, what's potato salad with eggs. Tweaked the dressing as well, added a little balsamic and a touch of sugar. Used nonstick spray to save the oil step for sausage saute.

    I was in the mood for something different and decided to try this potato salad. It was simple and delicious. The flavors went together well and although I was skeptical about the dijon mustard and red wine vinegar they went together wonderfully. This is a recipe I will make again. The only substitute I made was using turkey smoked sausage. Yum!

    I added more mustard and some balsamic vinegar for more zing. Also, left the celery out as I don't like raw celery. It was very good and quick. Reminded me of German Potato Salad which I love!

    I think this is a good base recipe but needs tweaked depending on what you and your family likes.

    I used a leaner, turkey smoked sausage. I used whole grain mustard in place of dijon and in place of green onion, I sauteed sweet onion in the sausage drippings. I added sugar to the dressing so between the sweet onion and the sugar, it balanced out the tartness of the mustard.

    Next time, I will cut the sausage in quarters before frying it up so you have more sausage in every bite than the big pieces.

    I will definitely make it again.

    Easy to make and was a very good combonation of foods. The Sausage & Potatoes together were tastey, but the green onion and the sauce took it to another level. I cannot eat celery, so I left that out and I did not have any Red Wine Vinegar, so I used Soy Sauce and a little Mayo to calm the tang for me from the mustard. All in all - loved it - and it got a good review from my Husband, who does not adapt to something new well. Thanks Paula & Bobby for another great recipe!

    If you like a tart potato salad, this is the one for you. It was VERY EASY!! Definitely could even be a beginner's recipe. The mustard & red wine vinegar make it a lot more tart than a traditional creamy salad. The green onions & celery are a tasty addition!
