Thanks to the previous comments I adjusted the amount of sweetened condensed milk to limit the sweetness. I liked the idea of using my double boiler so I didn't need to watch the rice as closely for scorching as the liquid was absorbed. Rather than using cherries, I chose to use dried cranberries. The cranberries were perfect is this sweet dish. My family asked to have this dessert again soon. That's high praise indeed!!

I never made rice pudding and was quite anxious to try the recipe -which I did right after the show. Although I had some minor alterations (eliminating the heavy cream and substituting the berries for raisins I think the recipe would have been better if it were not so sweet! Also, my rice was not perfectly tender. I have never done a double boiler before and did not even research before I tried, so maybe I did not have the double boiler set up correctly. How does a double boiler work??

I had seen this episode a few months ago. It finally turned cold so I decided to make it for an outdoor fall picnic. Since we were expecting 8 folks I doubled the recipe but didn't double the sweeten condensed milk nor the vanilla. I actually only used 4 teaspoons of the vanilla. I added a cup of of half and half because I knew I would be using a different cooking method that would allow more starch to be released.. See I used my crockpot to cook it because I was driving for over 2 hours. I start by cooking the rice in a normal pot then transferred it to my crockpot. Once in the car I plugged into an adapter in my van lighter socket.

I didn't have dried cherries in the pantry but I did have dried peaches. (I make old fashion stack cakes so I keep them on hand The pudding turned out so great!. It was very creamy and the rice was perfectly cooked for rice pudding. Peaches were a natural substitute for my gathering because we love them but since then I've used other dried fruits, like cranberries ad apricots. My kids love it so much I've fixed it for them three times in the last 10 days. I work from home so I do quite a lot of the cooking in our house.

Sorry to say that I was extremely disappointed in this recipe. The rice turned out very hard and as a whole it was extremely sweet. Would not recommend (even went out to purchase a double boiler to make it!

I double the ingredients by 1/2 but only used 1 can of the sweet milk and it turned out really well. everyone absolutely loved it. however, i did not use the dried cherries fearing that my kids would not care for them. will definitely be my rice pudding recipe of choice from now on.

Sorry, Lady & Sons. This rice pudding is horribly sweet. Perhaps the cherries added to the sweetness but I think it was mostly the sweetened condensed milk. The rice took over 45 mins to cook (would have been 14 mins if not in dbl boiler and still some kernels were not soft enough. Cooking rice this way you must keep lifting the lid to test the rice, a no-no for rice cooking. Plus, it's expensive with 2 T of vanilla, the cherries, SC milk and cream. I won't make this one again.

i love rice pudding, and i had high hopes for this dish based on the positive ratings. i didn't have an orange on hand, so i used clementine zest instead. perhaps this or the 2 TBSP of vanilla extract made my pudding curdle. i think perhaps 2 tsp would be better than 2 tbsp of extract. i plan to try again with some modifications. i have put in lemon zest into rice puddings without a problem.

I do not like Rice Pudding at all, however this recipe tasted amazing!! It was so good. I put nutmeg in it instead of using it as a garnish, and a few of my family member used Cinnamon. I also subsituted the cherries for rasins.

This is the best rice pudding ever. It was easy to make and it cooked up as easy as the recipe said and i would recommened it to all my friends. I love Paula Deen and her boys, they always have great recipes without all the useless crap that some of the others do.
