Ingredients
- 1 envelope plain gelatin
- 1/4 cup cold water
- 1/2 cup heavy cream, plus 1 1/2 cups heavy cream, whipped
- 8 ounces peppermint candies, soft type (recommended: Bob's)
- 1 prepared chocolate cookie crust
- Crushed hard peppermint candies, for garnish
Directions
Soften gelatin in water and set aside. Put 1/2 cup heavy cream in a small saucepan with candies and cook over low heat until candy melts. Add gelatin mixture and mix well. Let cool and fold in whipped cream. Pour into crust, sprinkle with crushed peppermint candies, and chill thoroughly.

It is edible, but barely. I must've gone wrong somewhere...the gelatin broke up into chunks, so you just fine a bite of gel in the middle of your bite of pie. The flavor is a little too mild, but that's could've been fixed...I just don't know how to fix the texture. Also, people weren't kidding about it taking a long time to melt those candies, it was WAY longer than the recipe said it would be to make this pie.

This pie is deliiiiiiicious!! I bought a pack of Publix brand soft mints which was 9 oz and the mints weren't wrapped, so it saved a lot of time. I just dumped the whole bag into the heavy cream to melt. They are fairly small too, so I didn't need to break them up. A few didn't melt completely, but that wasn't a problem. I added a little red food coloring and 1/4 tsp peppermint extract to the melted candy/cream. I let it cool WAY down (actually in the fridge but periodically stirred it to keep it from setting up, so it wouldn't melt my whipped cream. I also added 1/4-1/2 tsp of peppermint extract to the whipped cream. I folded it all together with a handful (maybe half a cup at most of white chocolate chips. The red food coloring made it look soooo pretty and swirly like a giant peppermint! I dusted the top with crushed soft mints and cocoa powder. It was delicious and didn't have a jelloey texture. Creamy, fluffy, minty, and yummy!

I had high hopes when I made this for a special Christmas dinner.I am an experienced baker and followed the recipe but this was a complete flop.
