Ingredients
  • 2 (10-ounce) packages frozen chopped broccoli, cooked and drained
  • 1 cup mayonnaise
  • 1 cup grated sharp cheddar
  • 1 (10 3/4-ounce) can condensed cream of mushroom soup
  • 2 eggs, lightly beaten
  • 2 cups crushed crackers
  • 2 tablespoons butter, melted
Directions

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl, combine broccoli, mayonnaise, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

Very good but I made a few changes. I used fresh broccoli and steamed it instead of frozen, only used 2/3 cup of mayo and cream of broccoli instead of mushroom. Mixture way too thin for a 13x9 baking dish. Way too much mayo & crushed crackers. Besides the cracker amount, the crackers made the dish too salty for my taste. I wanted to make a Broccoli Casserole, and this recipe seemed pretty simple and tasty ... so I tried it -- and liked it -- despite having to make many alterations based on what I had on hand. I used the following: > 2 crowns of broccoli (cut up and steamed 3 min, instead of the frozen > 1/2 cup chopped fresh musrooms and 1 cup half-n-half, instead of the soup concentrate > 1 cup commercial (bag shredded Cheddar Jack and 1/2 cup fresh-grated pepper jack cheese > 1 tsp salt and 1/2 tsp fresh ground pepper > 1.5 cups chopped fresh spinach (just to add flavor I only had 1 cup Progresso fine breads crumbs, but that seemed to be enough. It took me 4TB melted butter, though. I guess I'm not so good at pouring it evenly. If I do it again, I might use just 3/4 cup each mayo and half-n-half and might add a little grated nutmeg or other fragrant spice. Enjoy!! item not reviewed by moderator and published

Like this a lot...( Not to swoon over, but a lot my church cook book has a recipe VERY similar to this.BUT IT ADDS 1/2C diced sauteed onions to the broccoli mixture AND CHANGES THE TOPPING TO: 1 1/2 C Pepridge Farm Stuffing mix PLus 1/4 C diced onion and 1/2 stick melted butter. Mix butter with onion and stuffing. Top the casserole with this instead of Ritz cracker mixture. Top with a small. amt of cheese if you like ( optional Roasted ( not boiled chicken is a great addition...Just remember to season the chicken well w/ salt and pepper prior to roasting. Yummy, but as other reviewers have said it is a bit bland. The second time I made this I added 2 to 3 ounces of cream cheese and 1/3 of a cup of mayo. This was a great recipe! So delicious, I loved it!! I tried to lighten it up and make some changes, so I can use this for a one pot meal. Here are my chages: -Sub mayo for Greek Yogurt (I used 0 fat... next time I will use 2% -I went with fresh broccoli and steamed it (next time i will cut into very small pieces -Add 1c shredded chicken -Add 1/2c slivered almonds -I went without the butter and sprayed the top with canola spray -I added 1 tsp of salt and 1/2 tsp of pepper Next time I think I will add a touch of milk and some diced water chestnuts. I enjoyed this with my on litte twist. I added 1/2 cup french onions to the topping..... and I used CheezIts. This has been a family favorite for at least 30 years and it didn't fail for Easter dinner! I couldn't believe Paula makes it the same exact way, except we add minced onions. I'm not a measurer, while cooking, so just throw some in and stop when you think you've added enough! Before making this recipe, I made sure I had read all the reviews first. The people that did not rate this recipe good must have not followed it correctly. This casserole dish was delicious! It was creamy tasting and was not over powered by mayo like the very few said it was. I will be making this dish more then once. Everyone loved it and wanted more when we got home but of course there were no leftovers. The only thing, when Paula said that the eggs cause it to "puff" a little, the dish never really puffed at all. So, you may not even need to put eggs in there. This recipe is very tasty! After reading a few reviews, I decided to cut back on the mayo to 2/3 cup, and added an extra 1/2 cup of cheese. I only had Saltines available, but will try something different as a topping next time. I think this is a great "jump off" recipe and can be altered to many different tastes. The best part of this recipe is that is it so easy and basic you can make it as prepared or give it your own twist. The first time I made it as called for and my husband loved it, stating it was almost exactly like his mother used to make. Tonight I decided to give it a twist by adding cooked chicken, lightly sauteed onions, mushroom and garlic. After mixing it all together I added a little crushed red pepper, dash of cayenne and garlic salt. I substituted half of the mayo for sour cream and mixed my ritz crackers with some italian breadcrumbs. For people having trouble with this recipe, just know that you can do it any which way you want. If you do not like the airy texture, then do not add egg (add another can of soup or reduce it to one. My daughter went camping for a few days & when I spoke to her before she came home I asked her what she felt like eating when she got home.
