Ingredients

  • 2 (10-ounce) packages frozen chopped broccoli, cooked and drained
  • 1 cup mayonnaise
  • 1 cup grated sharp cheddar
  • 1 (10 3/4-ounce) can condensed cream of mushroom soup
  • 2 eggs, lightly beaten
  • 2 cups crushed crackers
  • 2 tablespoons butter, melted

Directions

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl, combine broccoli, mayonnaise, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

    We make this a little different..we add 2T of curry powder & top it w/bread crumbs instead of crackers, and sometimes we use... Broccoli spears and top it with bonless chicken breast and make it a one pan meal! Read more

    I just couldn't make one more green bean casserole this year and I remembered my aunt making a delicous brocoli casserole for... thanksgiving. I think this came pretty close. I did add a little house seasoning(garlic powder salt and pepper). I topped it with fried onions just because I thought my husbands heart would break without them. It was oh so good so it is now on my revised Thanksgiving menu.I think I have to make a double batch now my family loved it so much they ate the entire recipe.Read more
