    I wanted to make a Broccoli Casserole, and this recipe seemed pretty simple and tasty ... so I tried it -- and liked it -- despite having to make many alterations based on what I had on hand. I used the following:

    > 2 crowns of broccoli (cut up and steamed 3 min, instead of the frozen
    > 1/2 cup chopped fresh musrooms and 1 cup half-n-half, instead of the soup concentrate
    > 1 cup commercial (bag shredded Cheddar Jack and 1/2 cup fresh-grated pepper jack cheese
    > 1 tsp salt and 1/2 tsp fresh ground pepper
    > 1.5 cups chopped fresh spinach (just to add flavor

    I only had 1 cup Progresso fine breads crumbs, but that seemed to be enough. It took me 4TB melted butter, though. I guess I'm not so good at pouring it evenly.

    If I do it again, I might use just 3/4 cup each mayo and half-n-half and might add a little grated nutmeg or other fragrant spice.

    Like this a lot...( Not to swoon over, but a lot my church cook book has a recipe VERY similar to this.BUT IT ADDS 1/2C diced sauteed onions to the broccoli mixture AND CHANGES THE TOPPING TO: 1 1/2 C Pepridge Farm Stuffing mix PLus 1/4 C diced onion and 1/2 stick melted butter. Mix butter with onion and stuffing. Top the casserole with this instead of Ritz cracker mixture. Top with a small. amt of cheese if you like ( optional Roasted ( not boiled chicken is a great addition...Just remember to season the chicken well w/ salt and pepper prior to roasting. If you add appx 1/2 to 3/4 t of curry, this dish takes on a Divan type taste

    Additions!!~ I followed what the others said and used plain yogurt instead of mayonnaise, and added cheeze its on top for the cracker. I also threw in some diced, grilled chicken breasts for more filling (if you're in a tight rush like I was, just get the pre-grilled chicken. Conclusion, my Man melted all over this dish-especially with the addition of cheeze its! Too easy :

    I have made this recipe many times for special occasions. Always a big hit with my family, have doubled it so there are leftovers. So yummy!

    Loved this recipe, have made it twice this year because it was such a hit! I did use a couple of variations.... CheezIt crackers for the top and substituted Cream of Broccoli for the Cream of Mushroom.
