I love this recipe as well as my family and friends. It is requested every year and even after the holidays! I put my own spin on it by using a blend of six italian cheeses, Mozzarella, provolone, Parmesan, Asiago, Fontina and romano cheese (instead of the cheddar I als0 add lots of fresh garlic and "adobo" as additional seasoning.

I have been making this casserole since I was 12 years old. My mother found this in the newspaper (I still have the clipping It was called Broccoli Puff (a little different. This was 34 years ago and I have been making it every Thanksgiving. My family loves it. The only thing I do different is use bread crumbs instead of crackers. This has been a wonderful family recipe.

Follow the recipe below for the BEST version, and ones that kids LOVE!

2 packages frozed chopped broccoli, cooked and drained
    2 eggs well beaten
1 can cream of mushroom soup
1 cup sharp cheddar cheese (I usually use more, 1 1/2 -2 cups
    1/2 cup mayo
1 small onion grated, or finely chopped

mix all together and top with crushed Cheez-it crackers, then spray butter to coat.

Bake at 325 for 35 min.

I've made this recipe twice in the past two weeks. The first time I followed the recipe completely and it came out good tasting but I thought it was a little thin for the pan size. The next time I put it in a smaller pan and added diced onions. It came out very good this way.

My husband absolutley loved it, me and the kids were not as crazy about it. The flavor was there, but we did not like the texture (probably because of the eggs. I like dinner casseroles to be more dense and hearty as opposed to light and airy. It reminded me more of a breakfast-type of souffle.
