I used fresh broccoli that was already cooked, 2 cups of cheese instead of one, cream of chicken soup and topped it with Ritz roasted vegetable crackers....awesome casserole.

Paula has done it again! This simple and quick recipe is SO amazing. I used more cheese, reduced fat crackers, and more broccoli. It's easy to change a few things to make it your own but still get the great flavor that Paula intended. Yum!!

I loved this recipe... I changed a few things, like using low fat cream of mushroom, Light Mayo (and less of it, Breton Wheat crackers for the topping, reduced fat cheese, and adding a bit of black pepper and a pinch of garlic salt.
I also used fresh cooked broccoli as opposed to frozen, and used more than called for.
It came out great, and a lot less fat and calories.

This recipe was my mom's go-to for all pot luck meals for the last 30 years. Thanks Paula for sharing it with the world.

We also like it with no cracker topping, just topped with extra cheese :- yummy

Paula Deen loves her mayonnaise. This recipe is so incredibly easy that if I am really tired at night I make it for dinner. It tastes good too, but it's not great. It's actually a little bland, and not very good for you. I think it needs to be served with something. Maybe chicken? I usually make it by itself and everyone likes it, but I can't make it too often because it's so rich!

I love this recipe just the way it is, but my wife is not the biggest fan of cream of mushroom soup. So when I am making it for her specifically, I use cream of chicken soup. It gives the dish a nice flavor without the slightly sour flavor that my wife claims comes from cream of mushroom.

I would recommend letting the broccoli thaw but not cooking it before assembling the casserole, cooking it made the broccoli to mushy. The 9x13 dish was too big, try an oval casserole dish or an 8x11. I used Ritz crackers on top but did not care for the texture with this dish, next time I'll try crushed corn flakes.

I've been making this broccoli casserole for years...it is my go-to dish for family potluck, etc. BUT...I have always used Cream of Celery Soup instead of Cream of Mushroom. Try it and see which you like better. Cream of mushroom would probably be really good too...but I think the cream of celery adds a nice velvety flavor to the dish...and there are NEVER any leftovers. Everyone loves it, even the kids. Just thought I'd pass this suggestion along.
