wonderful, easy, and yummy! comfort food that's esp good as a side to light seafood! my vegetarian friends love topping the casserole w/sliced boiled eggs, and toasted pine nuts or sliced alomnds. i will enjoy making this for thanksgiving and topping it w/durkey fried onions.

I found this recipe in a fundraising cookbook sold by my nephew's school a few years ago. My gosh, what a wonderful idea! My husband is not able to eat broccoli so I substituted 2 16-ounce bags of frozen cauliflower when I served it at Thanksgiving dinner and I also used light mayo and Healthy Request soup and my family raved about the vegetable casserole! (The extra vegetables are probably the reason why my casserole didn't have any of that "quiche-like" texture some others have complained of. The cauliflower was creamy and delicious!! My recipe was exactly the same as Paula's, but also included 1/4 cup toasted slivered almonds, which add a wonderful crunch to the dish. I made it again for Christmas dinner last year and wouldn't hesitate to serve it for most any occasion. I heartily recommend this recipe with any vegetable; it's that versatile. Thanks for sharing our recipe, Paula!

I was worried about fat content in this recipe so I used fat free mayo, low fat cheese and soup and reduced fat ritz crakers. Also I prefer using fresh broccoli instead of frozen. This one is a keeper!

This recipe is so close to my mom's its not even funny! But we put crushed plain potatoe chips on top. It adds that little bit of salt that is needed. This is the best casserole to take to parties, potlucks, and special occations. We have it for every holiday meal. Gotta try it with chips!
